Falafel Dippers with Garlic Sauce

Falafel are deep-fried balls made from pureed beans or chickpeas and come from the Arabian cuisine.

The chickpeas are pureed, mixed with herbs & spices and then deep-fried in vegetable oil. I wish you lots of fun cooking 😉

Ingredients for 4 servings:

…for the garlic sauce:

  • 200 grams yogurt
  • 1 – 2 clove(s) garlic
  • ½ lemon
  • Olive oil
  • A pinch sumac
  • Salt & pepper

…for the falafel dippers:

  • 2 cans chickpeas
  • 75 grams flour
  • 1 small onion
  • 1 clove garlic
  • A handful fresh parsley & fresh cilantro each
  • 1 teaspoon ground coriander & cumin each
  • Salt & pepper
  • 1 – 1,5 liters oil for deep-frying

Required kitchen gadgets, helper & preparations:

  • Bowl for the garlic sauce
  • Garlic press
  • Colander
  • Blender
  • Large pot or wok for deep-frying
  • Skimmer
  • Kitchen paper
  • Dip bowls for serving

…for the garlic sauce:

Give 200 grams yogurt into a small bowl, add 1 – 2 clove(s) minced garlic & stir together with the juice of ½ lemon, a dash olive oil & a pinch of sumac. Season the garlic sauce with salt & pepper to taste, then set aside until dishing up.

…for the falafel mixture:




Drain off 2 cans of chickpeas over a colander, rinse thoroughly & allow to drain completely. Peel a small onion & coarsely chop. Also peel a clove garlic & coarsely chop.

Give the chickpeas along with a handful fresh parsley, a handful fresh cilantro, the onion & garlic dices, 1 teaspoon cumin, 1 teaspoon ground coriander into a bowl & season with a good pinch of salt & pepper.

Next, puree everything with a blender for about 3 – 4 minutes until all ingredients are well combined & you got a creamy chickpea mixture. Finally gradually add 75 grams flour & mix well.




…for the falafel dippers:

Heat up a large pot or wok adding 1 – 1,5 liters oil & once the oil is hot enough use 2 spoons to shape small cams from the chickpea mixture. Gently slide the shaped falafel carefully into the hot oil & deep-fry them for about 5 – 6 minutes until golden brown.

Lift out the done falafel with a skimmer & allow to drain on kitchen paper. Then dish up the falafel dippers along with the garlic sauce. I wish you lots of fun cooking 😉
