Next, add the onion strips & pour in 50 milliliters of olive oil & mix together all ingredients until the spices have distributed evenly. Cover the meat with a sheet of cling film and allow to marinate in the refrigerator for at least 4 hours.

…for the gyros with metaxa sauce:

Preheat the oven to 200°C (top/bottom heat) in time. After the marinating time, heat up a large pan without adding oil or fat, give the meat in portions into the pan & sear for 3 – 4 minutes from all sides. Afterwards lift the gyros out of the pan, spread in a casserole dish & set aside.

Put the meat pan back on the stove over medium heat, add 2 tablespoons of tomato puree and 2 tablespoons of ajvar to the pan and allow to roast for about 1 minute while stirring constantly. Next, add 75 milliliters of metaxa, stir in well and allow the metaxa to boil down almost completely.

Finally add 200 milliliters of cream & 400 grams of creme fraiche, stir in well, bring to a boil and then remove the pan from heat. Pour the hot metaxa sauce over the meat, top everything with about 150 grams of grated cheese and then bake the gyros in a preheated oven for about 20 minutes.

Get the done gyros out of the oven, dish up on plates & serve along with french fries. Finally garnish with some finely chopped parsley & enjoy. I wish you lots of fun cooking 😉
