Couscous patties are a wonderful vegetarian alternative to classic meatballs. The couscous is mixed with vegetables and different spices and formed into small patties.

In today’s post, I’ll show you an oriental spiced variety with ground coriander, cumin & sumac. I wish you lots of fun cooking 😉

Vegetarian Couscous Patties

Ingredients for 10 patties:

  • 250 grams instant couscous
  • 250 milliliters water
  • 1 red bell pepper
  • 1 small zucchini
  • 1 carrot
  • 2 eggs
  • 2 – 3 spring onions
  • 1 handful fresh parsley
  • 100 grams feta cheese
  • 1 heaping tablespoon ajvar
  • A teaspoon each of ground coriander, cumin & sumac
  • Salt & pepper
  • Oil for frying
  • Breadcrumbs to coat the patties

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Electric kettle
  • Grater
  • Large frying pan
  • Spatula
  • Bowl for the breadcrumbs
  • Kitchen paper

Instructions:

Boil 250 milliliters of water in an electric kettle. Give 250 grams of couscous to a mixing bowl, pour in 250 milliliters of boiling water, stir briefly and then set aside to soak for 10 – 15 minutes.

Deseed 1 red bell pepper and finely dice. Also cut 1 zucchini into fine cubes. Cut the spring onions into fine rings. Peel 1 carrot and grate roughly with a grater. Finely chop the parsley.

Heat up a large pan with a dash oil, add the finely chopped vegetables (except the parsley) & sweat for about 5 minutes over medium heat, stirring occasionally. Then remove the pan from heat, set aside & allow to cool briefly.




Loosen the couscous with a fork and then add the fried vegetables, 2 eggs, 1 heaping tablespoon of ajvar, the finely chopped parsley, 1 teaspoon each of ground coriander, cumin & sumac & a good pinch of salt & pepper.

In addition, crumble 100 grams of feta cheese to the couscous & then mix everything with your hands until all ingredients have evenly distributed.

Form about 10 small patties from the couscous mixture, while squeezing the mixture well with your hands, so that the patties do not crumble apart. Afterwards prepare a plate of breadcrumbs and turn the formed patties into them to coat from both sides.

Next, heat up a pan adding plenty of oil & once the oil is hot enough give the couscous patties in portions into the pan & gently fry them for about 4 – 5 minutes each side until golden brown.

Lift the done couscous patties out of the pan, allow to drain on kitchen paper & then dish up along with for example garlic sauce (see falafel recipe). I wish you lots of fun cooking 😉

  1. Hallo, ich würde gern dieses leckeren Couscous Bratlinge mal ausprobieren. Kann man diese schon am Vortag zubereiten und am nächsten nochmal erwärmen (z.B. im Backofen oder in der Heißluftfriteuse)? Oder ist es besser die Masse schon Vortag zu zubereiten und die Bratlinge frisch zu braten. Würde mich über eine schnelle Rückmeldung sehr freuen. Lg

  2. Hallo! Sie können die Bratlinge auch am nächsten Tag nochmal kurz im Ofen aufwärmen oder auch einfach kalt essen, dass haben wir auch schon gemacht. Das ist gar kein Problem 😉
