In today’s post, I’ll show you a simple & easy recipe for a quick pasta salad with dried tomatoes, rocket & chopped walnuts.
The pasta salad is made super fast & without much effort & is ideal as a side dish for barbecue or even as a light main dish for lunch or dinner. I wish you lots of fun cooking 😉

Ingredients for 1 Bowl Pasta Salad:
- 500 grams penne pasta
- 1 jar dried tomatoes (in oil)
- 250 grams mini mozzarella balls (or feta cheese)
- 50 – 75 grams rocket
- 1 large handful walnuts
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Mixing bowl
- Pot to cook penne
- Colander

Drain dried tomatoes, collect the oil & set aside. Cut the tomatoes into thin strips with a knife. Roughly chop walnuts. Bring a large pot of salted water to a boil and cook the penne pasta until al dente according to the package instructions.
…for the pasta salad:
Drain the done pasta over a colander, allow to stand for about 5 minutes & then put pasta back into the pot. Add the prepared dried tomatoes & the collected tomato oil to the penne and mix everything together until all noodles are moistened with a light oil layer.
Finally, add 250 grams of mini mozzarella, the chopped walnuts & 50 – 75 grams of rocket to the salad & mix well until all ingredients are well combined. Season the pasta salad with a good pinch of salt & pepper and serve. I wish you lots of fun cooking 😉
