In today’s post, I’ll show you a simple recipe for a super delicious onion cake.
Traditionally a yeast dough is used for an onion cake, which should rest or rise after kneading. Alternatively or if you have no time for resting the dough, everything works well with a dough made with curd & oil instead. Have fun baking 🙂

Instructions:
…preparations:
Line the bottom of a springform pan with baking paper & allow the rim to snap in as usual, then grease the rim with a little butter & set pan aside until further use. Preheat the oven to 200°C (top/bottom heat) in good time.
…for the dough:
In a mixing bowl, combine 225 grams flour, 125 grams curd, 75 milliliters milk, 50 milliliters oil, ½ sachet baking powder & ½ teaspoon salt & knead together for 3 – 4 minutes with a kitchen machine or mixer with dough hooks until smooth.
Afterwards put dough on a slightly floured worktop & briefly knead again u´with your hands, shape dough into a ball & then use a rolling pin to roll out in a round & about 0,5 centimeter thick dough sheet.
Transfer the dough sheet into the prepared springform pan & line the bottom as well as the rim with dough, then set springform pan aside until further use.
…for the onion filling:
Peel off onions & cut into thin strips. Heat up a large frying pan adding a heaping tablespoon butter & gently sweat onions over low to medium heat for about 10 – 12 minutes until glassy, without browning the onions while frying.
After onions are fried, sprinkle them with a heaping tablespoon flour, stir together & then remove pan from heat & allow onions to cool a bit.
Meanwhile, in mixing bowl whisk together 3 eggs, 150 milliliters cream & a generous pinch of salt & pepper until well combined. Also use a sharp knife to cut smoked bacon into small cubes.
…for the onion cake:
Fill the cooled onions into the prepared springform pan, pour over egg cream mixture & finally top the cake evenly with bacon cubes. Then bake onion cake in a preheated oven at 200°C (top/bottom heat) for about 35 – 40 minutes until the surface is golden brown.
Get the done onion cake out of the oven & allow to stand within the springform pan for about 10 minutes to cool. Then remove springform pan, cut onion cake into pieces & dish up on plates garnished with chopped chives. I wish you lots of fun baking 😉
