“Dürüm” (kebab) is a Turkish flatbread roll or wrap. The wraps are traditionally filled with salad, kebab sauces & falafel, kofta or sliced meat.

In today’s post, I’ll show you a recipe for fast Dürüm rolls filled with various salad ingredients & a simple kebab sauce. Have fun cooking!

Ingredients for 8 servings:

…for Turkish flatbreads:

  • 500 grams flour
  • 250 milliliters water
  • 50 milliliters oil
  • 1 teaspoon salt

…for coleslaw:

  • 1 pointed cabbage
  • Salt, sugar & pepper
  • Olive oil & white wine vinegar

…for kebab sauce:

  • 200 grams sour cream
  • 200 grams yogurt
  • A handful fresh herbs (for example parsley, dill & chives)
  • 1 – 2 clove(s) garlic
  • 2 – 3 tablespoons ketchup
  • 1 teaspoon sambal oelek
  • Salt & pepper

…more ingredients:

  • 1 head Iceberg lettuce
  • 1 small cucumber
  • 2 – 3 tomatoes
  • 1 onions + a good pinch sumac to sprinkle
  • 1 can corn
  • 150 grams feta cheese

Required kitchen gadgets, helper & preparations:

  • Kitchen machine
  • Mixing bowl
  • Large pan to bake wraps
  • Rolling pin
  • Plate to stack flatbread wraps
  • Kitchen towel
  • Bowl for coleslaw
  • Bowl for kebab sauce
  • Whisk
  • Garlic crusher

Instructions:




…for coleslaw:

Cut pointed cabbage into thin strips. Put the cabbage into a mixing bowl, season with a good pinch of salt & sugar and knead with your hands for 1 – 2 minutes until the cabbage begins to lose some water.

Season the coleslaw with a good dash of white wine vinegar & olive oil as well as with a good pinch freshly ground pepper, then set aside.

…for kebab sauce:

Finely chop herbs with a knife & then put them along with 200 grams sour cream & 200 grams yogurt in a mixing bowl. Add 1 – 2 clove(s) crushed garlic as well as 2 – 3 tablespoons ketchup & 1 teaspoon sambal oelek. Mix everything together with a whisk, then season with salt & pepper to taste & set aside until serving.




…for thin flatbreads:

Add 500 grams flour, 250 milliliters water, 50 milliliters oil & a teaspoon of salt to a mixing bowl & knead with your hands or a food processor for 4 – 5 minutes until a smooth dough. Cut the dough into 8 equal sized pieces and then give each piece of dough a ball shape.

Next, slightly flour the worktop & roll out the dough pieces one by one with a rolling pin until thin and flat to the size of a plate. Then heat up a large frying pan without oil or fat & as soon as the frying pan is hot enough, bake the dough sheets one after the other at medium to high heat for approx. 1 minute each side.




Once there are small bubbles on the top, the wrap can be turned over and baked on the other side until done. Stack the finished tortilla wraps on a plate and leave to cool with a damp kitchen towel. The damp kitchen towel keeps the wraps soft and makes them easier to fold up later.

…for salad wraps:

Cut Iceberg lettuce into thin strips. Dice tomatoes & cucumber. Peel off an onion & also cut into thin strips, then season with a good pinch sumac.

Then spread the flatbreads with a few spoons kebab sauce, fill with coleslaw & iceberg lettuce, cucumber and tomato cubes, onion strips, corn and feta cheese. Roll up the salad wrap & serve. I wish you lots of fun cooking 😉
