You can’t go wrong with pasta, especially because it tastes great & usually prepared within minutes. The absolute classic dish: Spaghetti Bolognese. But it does not always have to be meat to cook a delicious Bolognese sauce.
In today’s post, I’ll show you a quick & vegan recipe for spaghetti Bolognese. The minced meat is replaced by tofu & seasoned with soy sauce, paprika, onion powder & garlic powder. Have fun cooking!

Ingredients for 4 servings:
- 500 grams spaghetti
- 500 grams sieved tomatoes
- 200 grams tofu
- 125 milliliters each of red wine & water
- 25 milliliters soy sauce
- 1 small piece celeriac
- 1 carrot
- ½ stick leek
- 1 heaping tablespoon tomato paste
- A teaspoon each of sweet paprika powder, garlic powder & onion powder
- A teaspoon each of oregano, thyme & rosemary
- Oil for frying
- Salt, sugar & pepper to taste
- Basil for garnish
Required kitchen gadgets, helper & preparations:
- Small bowl for tofu mixture
- Pot or saucepan for sauce
- Large pot for pasta
- Colander
Instructions:
…preparations for veggie Bolognese sauce:
Crumble tofu with your hands & put in a bowl. Add 25 milliliters of soy sauce & 1 teaspoon each of garlic powder, onion powder and sweet paprika powder and stir together until everything is well combined. Next, peel 1 piece of celeriac and 1 carrot & dice finely, then quarter ½ stick leek along the length and cut into thin strips.
Heat up a large pan adding a good dash oil & sauté tofu crumbles over medium heat for about 2 – 3 minutes until slightly browned, stirring occasionally. Next, add celeriac, carrots & leek & sauté for another 3 – 4 minutes. If that’s done stir in a heaping tablespoon tomato paste & briefly roast.
Then deglaze the vegetables with 125 milliliters red wine & allow the wine to boil down almost completely. Afterwards pour in 500 milliliters sieved tomatoes as well as 125 milliliters water & season the sauce with a teaspoon each of oregano, thyme & rosemary. Give the sauce a good stir & then allow to simmer gently for about 7 – 8 minutes over low heat.

Meanwhile, bring to a boil a large pot with salted water & cook spaghetti for 7 – 8 minutes or according to package directions until al dente, then drain over a colander. Finally season the sauce with salt, sugar & pepper to taste & remove from heat.
Spread spaghetti on deep plates & dish up along with a few spoons veggie Bolognese sauce. Finally garnish with a bit fresh basil & serve. Have fun cooking!
