Strawberry time is cake time and what fits better than a delicious sponge flan with aromatic strawberries?! The cake bottom is made super fast & consists only of flour, sugar, butter, eggs & baking soda.
The cake is topped with a ganache made of cream and white chocolate as well as fruity strawberries. Have fun baking!

Ingredients for a sponge flan with strawberries:
…for cake base:
- 3 eggs
- 125 grams flour
- 100 grams sugar
- 75 grams butter
- 1 heaping tablespoon baking powder
- Butter + flour to grease baking pan
…for ganache & toppings:
- 150 grams white chocolate
- 75 milliliters cream
- About 750 grams fresh strawberries
- Sliced almonds for garnishing
Required kitchen gadgets, helper & preparations:
- Mixing bowl for batter
- Sponge flan baking pan
- Small sieve
- Small saucepan for cream
- Small bowl for ganache
…for cake base:
Preheat the oven to 180°C (top/bottom heat). Grease a sponge flan baking pan with butter, then dust with flour & set aside. Put 3 eggs & 100 grams sugar & 75 grams melted butter into a mixing bowl & mix together with a blender for about 2 – 3 minutes until fluffy.
Next get a sieve & add 125 grams flour & 1 heaping teaspoon baking powder through the sieve to the egg mixture, stir in briefly with a whisk & then pour the dough into the prepared baking pan & spread evenly.
Place the pan in the preheated oven and bake for 12 – 15 minutes until golden brown. Then remove the sponge flan from the oven, carefully overthrow onto a cooling rack & allow to cool completely.
Coarsely chop 150 grams of white chocolate with a knife & place in a small bowl. Pour 75 milliliters of cream into a saucepan, bring to a simmer over low to medium heat & then immediately remove from heat and pour over the white chocolate chunks. Allow to stand for 1 – 2 minutes, then stir together until a thick chocolate sauce.

Pour the white chocolate sauce onto the cooled cake base and spread evenly. Next, press the strawberries next to each other evenly on the ganache & garnish everything with some sliced almonds. Serve the strawberry sponge flan immediately or store in the fridge until serving. Have fun baking!
