Homemade Canadian Poutine

Poutine is a popular fast food specialty in Canada. It consists of French fries, cheese curds and a brown & thick gravy.

In today’s post I show you a variation with a spicy mushroom cream sauce, instead of cheese curds we simply use grated cheese. Have fun cooking!

Ingredients for 4 servings:

  • 1 kilogram French fries
  • 500 grams brown mushrooms
  • 400 milliliters beef stock
  • 100 milliliters cream
  • 1 onion
  • 1 – 2 cloves garlic
  • 1 heaping tablespoon tomato paste
  • 1 heaping teaspoon cornstarch
  • A teaspoon each of rosemary & thyme
  • Salt & pepper
  • Oil for frying
  • About 100 grams grated cheese (for example Gouda cheese)
  • Parsley for garnishing

Preheat the oven in good time and bake the French fries until golden brown and crispy in the oven. Clean mushrooms & cut into thin slices with a knife.

Peel off onion & garlic & finely chop. Finely chop parsley & set aside for garnish. In a small bowl stir together 1 heaping teaspoon of cornstarch with a little cold water until smooth, then set aside.




…for mushroom sauce:

Heat up a large pan adding a good dash of oil & sauté the mushrooms over medium to high heat for 2 to 3 minutes, stirring occasionally. Then remove the mushrooms from the pan and set aside.

Next, add some more oil to the pan, add onions & garlic and sweat until glassy for 2 – 3 minutes over medium heat. When this is done, stir in 1 heaping tablespoon of tomato paste and fry briefly.

Deglaze everything with 400 milliliters beef stock, 100 milliliters cream & season with a teaspoon each of rosemary and thyme, stir well and then bring the sauce to a boil.




Finally, add the cornstarch mixture as well as the mushrooms with mushroom juice to the pan, stir well again and allow to simmer gently until the sauce has reached a nice & creamy consistency. Season the sauce with salt & pepper to taste and then remove from heat.

…for poutine:

Remove the French fries from the oven after baking and spread on deep plates. Then sprinkle the fries with a handful grated cheese and afterwards pour over 1 – 2 dippers of sauce. Garnish the poutine with a little parsley and serve. Have fun cooking!
