…preparations for tomato sauce:
Peel onion & garlic & chop finely. Deseed pepper & cut into small cubes. Cut the hot pepper into thin strips (possibly deseed also before). Roughly dice the tomatoes.
Heat up a large pan adding a dash of oil, add the onions, peppers and garlic to the pan and sweat for 2 – 3 minutes over medium heat, stirring occasionally.
Next, add 1 teaspoon each of sweet and hot paprika powder, cumin & ground coriander, stir in well and allow the spices to roast briefly. Then add the tomatoes & cook gently until softens for about 15 – 20 minutes over low to medium heat while stirring from time to time. Afterwards season with salt, sugar & pepper to taste.
Use a spoon or spatula to slightly move the tomato sauce to the side in four places, so that small wells are formed, then crack in 4 eggs to fill the wells.
Cover the pan with a lid and allow the eggs to poach in the tomato sauce for about 5 minutes over a low heat. Garnish the finished shakshuka with finely chopped parsley or cilantro and serve along with bread. Have fun cooking!
