Simple German Christmas Stollen with Quark

A “Stollen” is a bread-shaped cake made of heavy yeast dough. The main ingredients of the German Christmas Stollen are flour, butter, sugar and dried fruits (for example raisins), but also other fillings such as marzipan or poppyseeds are possible.

In today’s post, I’ll show you a super easy recipe for a “Stollen” with quark & baking soda instead of yeast. For the dough, all the ingredients just need to be kneaded together & after that the “Stollen” is ready to bake in the oven. Have fun baking 😉

Baking German Christmas Stollen with Quark

Ingredients for 1 Stollen:

  • 500 grams flour
  • 250 grams quark
  • 200 grams sugar
  • 200 grams soft butter
  • 200 grams raisins
  • 100 grams ground almonds
  • 50 grams candied lemon peel
  • 50 grams candied orange peel
  • 2 eggs
  • 1 sachet baking powder
  • 50 grams butter + powdered sugar for dusting

Required kitchen gadgets, helper & preparations:

  • Kitchen machine or mixer with dough hook
  • Mixing bowl
  • Stollen baking dish
  • Baking tray + baking paper
  • Brush
  • Sieve

Instructions:




…for dough:

Put 500 grams flour, 250 grams quark, 200 grams soft butter, 200 grams sugar, 100 grams ground almonds, 2 eggs & 1 sachet of baking soda to a mixing bowl & knead for 4 – 5 minutes with a food processor or blender with dough hook until mixed well.

Finally, add 200 grams of raisins, 50 grams of candied lemon peel as well as 50 grams of candied orange peel & briefly knead together until dried fruits are evenly distributed.




…for Stollen with Quark:

Preheat the oven to 180°C (top/bottom heat) in good time. Line a baking tray with baking paper and grease a stollen baking pan well with butter.

Put the dough into the buttered baking pan, press it evenly and carefully overthrow onto the prepared baking tray, then bake the quark stollen cake for about 45 – 50 minutes in the preheated oven.




Get the done stollen cake out of the oven, remove the baking pan and then brush the hot cake with 50 grams of soft butter. At the end, dust the stollen with plenty of icing sugar and allow to cool completely before serving. Have fun baking!

  1. Thank you your video is perfect – easy to follow. This recipe is the same as that my mother in law gave me. I make it for my husband and he loves it however I don’t think I bake it properly. I don’t have a stollen pan so it is shaped into a large loaf shape and placed on a baking sheet. I bake it and the pick always comes out clean. When it’s cut the centre seems to be dense and looks doughy. I’m not sure what I am doing wrong, any thoughts? Thanking in advance, Marina
