In today’s post I will show you a simple recipe for pork steaks with oven vegetables & aioli. For this recipe we use potatoes, pumpkin, parsley roots, carrots & red onions, but the dish can also be modified with different & seasonal vegetables of your choice as well.
There is also a aioli or garlic mayonnaise, which is prepared with milk instead of egg & is on the table in under 2 minutes. All in all, this recipe is suitable for anyone who doesn’t like to spend longer in the kitchen than necessary 🙂

Ingredients for 4 servings:
…for steaks & oven vegetables:
- 4 pork steaks (200 grams each)
- 500 grams potatoes
- ½ pumpkin
- 2 – 3 carrots
- 2 – 3 parsley roots
- 3 – 4 red onions
- 3 – 4 sprigs each of rosemary & thyme
- Oil for frying
- Salt & pepper
…for aioli:
- 200 milliliters canola oil
- 100 milliliters lukewarm milk
- 1 – 2 cloves garlic
- ¼ teaspoon mustard
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Grill pan
- Baking sheet + baking paper
- Tall container for blending
- Blender
Instructions:
…preparations for oven baked vegetables:
Preheat the oven to 200°C (top/bottom heat) in good time. Line a large baking sheet with parchment paper. Peel potatoes & cut into wedges. Peel carrots & parsley roots & cut into pieces that are not too small. Peel and quarter the onions. If necessary, peel the pumpkin & roughly cut it into pieces.
Spread the vegetables evenly on the prepared baking sheet, place rosemary and thyme sprigs between the vegetables and then season everything with salt & pepper. Finally drizzle the vegetables with a good dash of oil & put them in the preheated oven for 45 – 50 minutes.
…for aioli:
Peel off garlic & put in a tall blender jar together with 100 milliliters of room-warm milk, ¼ teaspoon of mustard & a good pinch of salt & pepper & puree with a hand blender for 20 – 30 seconds.
Next pour in 200 milliliters of canola oil, place the blender on the bottom of the jar & start mixing by slowly pulling up the blender until all the ingredients have combined to form a creamy aioli.
…for pork steaks:
Heat up a large grill pan with a dash of oil & as soon as the pan is really nice and hot, put the steaks in the pan & sear for 2 – 3 minutes on each side. Then lift the steaks out of the pan & put them in the oven for the last 6 – 7 minutes with the oven vegetables & finish cooking.
After the cooking time, take the oven vegetables and pork steaks out of the oven, arrange on plates & serve along with the aioli. Finally, season the pork steaks with a little coarse salt and freshly ground pepper. Have fun cooking!
