“Berliner” or doughnuts are small, round pastries made of yeast dough filled with jam or fruit jelly & are preferably sold on New Year’s Eve or Carnival.
Normally jam filed doughnuts will be deep-fried in fat, but today I show you a simple variant for the oven. Baking jam filled doughnuts in the oven is not as difficult as it sounds. Give it a try & have fun baking!

Ingredients for about 10 Oven Baked Jam Filled Doughnuts:
- 500 grams flour
- 250 milliliters milk
- 75 grams sugar
- 50 grams soft butter
- 1 egg
- ½ cube fresh yeast
- 1 sachet vanilla sugar
- A pinch of salt
- About 100 grams jam of your choice
- Soft butter for brushing
- Powdered sugar for dusting
Required kitchen gadgets, helper & preparations:
- High container to stir together yeast-milk-mixture
- Whisk or fork
- Kitchen machine or mixer with dough hook
- Mixing bowl
- Kitchen towel
- Baking sheet + parchment paper
- Syringe, piping bag or squirt bottle each with a long thin spout
- Brush
- Sieve
- Wire rack
Instructions:
…for the yeast dough:
Crumble ½ cube of fresh yeast into a high container & pour in 250 milliliters lukewarm milk. Next, stir together with a whisk or fork until the yeast has completely dissolved.
In a mixing bowl combine yeast-milk-mixture along with 500 grams flour, 1 egg, 75 grams sugar, 50 grams soft butter, 1 sachet vanilla sugar & a pinch of salt & knead together with a kitchen machine or mixer with dough hook for about 4 – 5 minutes until you got a smooth but still sticky dough.
Then place the dough on a lightly floured work surface, knead it with your hands from the outside inwards & form a ball out of the dough. Afterwards cut the dough into 10 pieces of approximately the same size & shape the dough pieces into small balls one after the other.
Place the dough balls a little apart on a baking sheet lined with baking paper & allow to rest covered with a kitchen towel for about 30 – 45 minutes.
…for doughnuts:
Fill the jam into a piping bag, a syringe or a squirt bottle with a long thin spout & have it ready. Preheat the oven to 180°C (top/bottom heat) in good time & bake the doughnuts until golden brown for about 15 – 20 minutes after the resting period.
Then take the done doughnuts out of the oven, allow them to cool briefly on the tray until you can touch them, fill them in turn with the prepared jam & put them back on the baking tray.
Finally, brush all doughnuts with a little soft butter & dust with plenty of powdered sugar. Have fun baking!
