Moist Lemon Cake with Sugar Icing

At Christmas time I showed you a recipe for a delicious chocolate cake with mulled wine. Today a super moist lemon cake with icing is on the table, for which I only had to adjust the recipe slightly 😉

The lemon cake is only flavored with lemon zest, the lemon juice ends up in the icing. Have fun baking 😉

Moist Lemon Cake with Sugar Icing

Ingredients for 1 Lemon Cake with Icing:

  • 350 grams flour
  • 250 grams powdered sugar
  • 200 grams sugar
  • 200 grams soft butter
  • 200 milliliters milk
  • 50 grams cornstarch
  • 4 eggs
  • 2 organic lemons
  • 1 sachet vanilla sugar
  • ½ sachet baking powder
  • A pinch of salt
  • Butter to grease the pan

Required kitchen gadgets, helper & preparations:

  • Kitchen machine or mixer
  • Mixing bowl
  • Bundt cake pan or other suitable baking pan
  • Fine grater
  • Lemon squeezer

Instructions:

Preheat the oven to 180°C (top/bottom heat) in good time. Grease a bundt or box baking pan with a little butter. Finely grate 2 organic lemons with a fine grater & also squeeze out the juice, then set both aside.

Next, add 350 grams flour, 50 grams cornstarch, ½ sachet baking powder & a pinch of salt to a small bowl and mix everything with a spoon until all ingredients are evenly distributed.




Then put 4 eggs, 200 grams sugar, 1 sachet vanilla sugar, the lemon zest & 200 grams soft butter to a mixing bowl and mix with a blender or kitchen machine for 1 – 2 minutes until white and creamy.

When this is done, add flour mixture and 200 milliliters of milk to the creamy egg mixture and stir in until flour and milk have been completely incorporated and you got a smooth batter, which is running in a viscous way from the stirring hook.

Finally transfer the batter into the greased baking pan, then put the lemon cake into the preheated oven and bake for 50 – 60 minutes until done. Get the done cake out of the oven, carefully overthrow onto a wire rack or cake plate & allow to cool completely.




Meanwhile, put 250 grams of powdered sugar in a small bowl, gradually add lemon juice & mix well until you get a viscous icing. Decorate and serve the cooled cake with icing. Have fun baking!
