In today’s post, I’ll show you a super quick & easy recipe for a tasty ground beef stir-fry with a lot of vegetables & a Greek taste, a recipe for those who like to eat “low carb”.
For this recipe, you can in principle use all the vegetables that are still in the pantry or in the refrigerator. Today I will show you a variant with bell peppers, zucchini & mushrooms. Have fun cooking!

Ingredients for about 4 servings:
- 500 grams ground meat
- 250 grams mushrooms
- 2 bell peppers (red & yellow)
- 2 medium zucchini
- 1 large onion
- 2 – 3 clove(s) garlic
- 100 grams feta cheese
- 1 can chopped tomatoes
- 1 heaping teaspoon cumin
- A teaspoon each of rosemary & thyme
- ½ teaspoon cinnamon
- Oil for frying
- Salt & pepper
- Parsley for garnish
Required kitchen gadgets, helper & preparations:
- Large frying pan
Peel onion & garlic & chop finely. Deseed bell peppers & cut into bite-sized pieces. Halve or quarter mushrooms according to size. Quarter the zucchini lengthways and cut into pieces about 1 centimeter thick. Finely chop parsley & set aside until serving.
…for ground beef stir fry:
Heat up a large pan with a dash of oil, add the onions and garlic to the pan & sweat for 2 – 3 minutes over medium heat, turning occasionally. Next increase the heat a bit, add the ground beef & fry until crumbly for another 5 – 6 minutes, turning occasionally.
When that’s done, season the beef with 1 heaping teaspoon of cumin, 1 teaspoon each of rosemary and thyme, ½ teaspoon of cinnamon and a good pinch of salt and pepper, stir in the spices and briefly sauté. Finally stir in a can of chopped tomatoes & then lift the beef mixture out of the pan & set aside.
Next, add another good shot of oil to the pan, also add the prepared vegetables & sauté for 6 – 7 minutes until everything is cooked, but still has enough bite, stirring or tossing occasionally. Then season the fried vegetables with salt & pepper to taste.
Finally, put the ground beef mixture back to the pan, give everything one last stir & see on heard plates & then serve garnished with crumbled feta cheese and finely chopped parsley. Have fun cooking!
