In today’s post I will show you a super quick & easy recipe for a delicious “Schupfnudel” (finger-shaped potato dumplings) stir-fry with pointed cabbage & bacon. As an alternative to the finger-shaped potato dumplings, gnocchi or spaetzle also go very well.
The recipe is very simple & consists of only 5 ingredients (in addition to salt & pepper), namely: finger-shaped potato dumplings, pointed cabbage, bacon, creme fraiche & vegetable stock. Ideal for a quick midweek lunch. Have fun cooking!

Ingredients for 2 servings:
- 500 grams finger-shaped potato dumplings (from the refrigerated shelf)
- 400 grams pointed cabbage
- 150 grams creme fraiche
- 100 milliliters vegetable stock
- 100 grams bacon bits
- Oil for frying
- Salt & pepper
- Fresh chives for garnish

Cut the pointed cabbage into strips with a knife. Cut the chives into fine rolls & set aside for the garnish. Heat up a large pan with a dash of oil & fry the potato dumplings over medium heat & occasionally turning for 5 – 6 minutes until brown and crispy, then lift out of the pan & set aside.
Next, add 100 grams of bacon bits to the pan & fry while turning occasionally over medium heat for 1 – 2 minutes. Then add the pointed cabbage & fry for another 3 – 4 minutes while turning to wilt the cabbage a bit. Finally, stir in 100 milliliters of vegetable stock & 150 grams of creme fraiche, simmer everything briefly & season with salt & pepper to taste.
Spread the prepared potato dumplings on deep plates & serve along with the pointed cabbage & bacon mixture. Garnish with a little chives & serve. Have fun cooking!
