In today’s post, I’ll show you a quick & easy recipe for a gratinated veggie & ground meat sheet pan. The meat is spread out on a baking sheet, then topped with vegetables & cheese and baked in the oven until done.
In this recipe I use mushrooms, zucchini & peppers, but any other vegetables are also suitable for this recipe. Have fun cooking!

Ingredients for 1 large sheet:
- 750 grams ground meat (half beef/half pork)
- 250 grams brown mushrooms
- 1 red bell pepper & 1 zucchini
- 1 can chopped tomatoes
- 1 large onion
- 1 – 2 cloves garlic
- 2 eggs
- 200 grams grated cheese
- 1 heaping teaspoon mustard
- 2 – 3 tablespoons ketchup
- 1 heaping teaspoon sweet paprika powder
- 1 tablespoon Italian herb mixture
- Oil for frying
- Salt & pepper
- Parsley for garnish
Required kitchen gadgets, helper & preparations:
- Mixing bowl for ground meat mixture
- Garlic press
- Baking sheet + baking paper
- Frying pan for veggies
Instructions:

Peel off onion, chop it finely & place in a mixing bowl together with 750 grams of ground meat. Add 1 – 2 pressed garlic cloves, 2 eggs, 1 heaping teaspoon of mustard, 1 heaping teaspoon of sweet paprika powder, 2 – 3 tablespoons of ketchup & a good pinch of salt & pepper to taste. Then mix everything with your hands or knead until all ingredients are evenly spread.
Line a baking sheet with parchment paper, place the meat dough on the baking sheet & press it flat evenly thick. For the vegetable topping, clean 250 grams of mushrooms & halve or quarter them depending on their size. Wash the peppers, remove the seeds and cut into small pieces. Wash the zucchini & cut into small pieces as well.
Next, heat up a large pan with a dash of oil, add the vegetables to the pan & fry for 4 – 5 minutes, turning occasionally. Then add 1 tablespoon of Italian herbs, a good pinch of salt & pepper and 1 can of chopped tomatoes, stir everything well, briefly bring to a boil & remove from the stove.
Preheat the oven to 200°C (top/bottom heat) in good time. Distribute the vegetables evenly on the ground meat, sprinkle everything with 200 grams of grated cheese & then bake for about 20 minutes in the preheated oven until the meat is done & the cheese has turned into a golden brown color.
Take the done veggie & ground meat sheet pan out of the oven, cut into pieces & serve garnished with chopped parsley. Have fun cooking!
