The asparagus season has begun & the first asparagus has been in the supermarkets for a few weeks. Of course I couldn’t walk around it & took a bunch of green asparagus with me straight away.
Since there was still a meat sausage in the fridge at home & I felt like pasta again, everything came together in the pan & the result was this delicious & super quick to make one pot pasta with creamy sauce, asparagus & sausage insert. Have fun cooking!

- 500 grams corkscrew pasta (or other type of pasta)
- 500 grams green asparagus
- 250 grams of meat sausage (cooked ham or “Kassler”)
- 200 milliliters cream
- 1 liter water
- 75 grams Parmesan cheese
- 1 large onion
- 2 – 3 cloves garlic
- ¼ lemon
- Salt & pepper
- Oil for frying
Required kitchen gadgets, helper & preparations:
- Large pan or pot with lid
- Vegetable peeler for asparagus
- Grater for Parmesan
Instructions:
…for one pot pasta with asparagus & meat sausage:
Peel and finely chop a large onion. Also peel and finely chop the garlic. Wash the asparagus, peel off the lower third with a vegetable peeler & cut off the woody ends, then cut the asparagus into pieces. Cut the meat sausage (alternatively boiled ham or “Kassler”) into small cubes.
Heat up a large pan (or pot) with a good dash of oil, add the onions & garlic to the pan & sweat over medium heat for 2 – 3 minutes, turning occasionally. Then add 500 grams of uncooked corkscrew pasta, the pieces of asparagus and meat sausage, 1 liter of water, 200 milliliters of cream and 2 teaspoons of salt to the pan.
Bring the contents of the pan to a boil while stirring occasionally & allow to simmer gently with the lid closed over low heat for approx. 10 – 12 minutes, stirring from time to time so that nothing can burn on the bottom of the pan. Meanwhile, finely grate the Parmesan and set aside.
As soon as the pasta is cooked, stir in 2 – 3 hands of grated parmesan, season everything with salt, pepper and a dash of lemon juice to taste & then spread the one pot pasta on deep plates & serve. Have fun cooking!
