Instructions:
…for potato cake with bacon bits & onions:
Peel and finely chop the onions. Peel potatoes and cut into small cubes. Put 4 eggs, 200 milliliters of cream, 1 pressed garlic clove and a good pinch of salt and pepper in a mixing bowl, whisk together and set aside.
Heat up a large pan with a small dash of oil, add onions & bacon bits to the pan & sauté for 3 – 4 minutes over medium heat, turning occasionally.
Then add the potato cubes & sauté for another 3 – 4 minutes, stirring occasionally. Finally, season everything with 1 heaping teaspoon of sweet paprika powder and a good pinch of salt and pepper to taste.
Preheat the oven to 180°C (convection) or 200°C (top/bottom heat) in good time. Pour the potato mixture into a casserole dish lined with baking paper, spread it evenly & then pour over the prepared egg-cream mixture and sprinkle everything with grated cheese.
Place the casserole dish in the preheated oven for 45 – 50 minutes until the potatoes are cooked and the potato cake has turned into a nice golden brown colour. Take the finished potato cake out of the oven & allow to cool down a bit in the tin.
Then lift (or fall) out of the mold, cut into pieces & serve. A salad with dressing goes well as a side dish, I can recommend chopped parsley for the garnish. Bon appetit & have fun cooking!
