In today’s post I’ll show you another recipe with rice & of course the whole thing in a very uncomplicated & quickone pot rice pan variant.
Italian salsiccia sausages, vegetables & rice cook together with spices in a pan, very aromatic & delicious. For this recipe I used parboiled long grain rice with a cooking time of only 12 – 15 minutes, so lunch including preparation and cooking time is on the table in a maximum of 30 minutes. Ingredients for 4 servings:
- 8 “salsiccia” sausages (about 400 grams)
- 200 grams parboiled rice (cooking time 12 – 15 minutes)
- 500 milliliters water
- 150 grams brown mushrooms
- 125 grams olives
- 1 red bell peppers
- 1 small zucchini
- 1 large onion
- 2 – 3 cloves garlic
- 1 can chopped tomatoes
- 2 heaping teaspoon Italian herbs
- Salt & pepper
- Oil for frying
- Basil for garnish

Instructions:
…for one pot rice pan with salsiccia & veggies:
Peel off a large onion and 2 – 3 cloves of garlic and cut into strips or slices. Wash, deseed and cut the peppers into bite-sized pieces. Quarter the zucchini lengthwise and cut into pieces that are not too thin. Clean and slice mushrooms. Heat a large pan with a good splash of oil, add the salsiccia to the pan and fry for 2 – 3 minutes on each side over medium heat, then remove from the pan and set aside briefly.
Then add the prepared vegetables to the pan and fry for 2 – 3 minutes over medium heat, turning occasionally. Stir in 200 grams of parboiled long-grain rice and 2 heaped teaspoons of Italian herbs and fry briefly for a few seconds. When that’s done, add 125 grams of olives, 1 can of chopped tomatoes, 500 milliliters of water & 1 – 2 teaspoons of salt to the pan. Also add the fried salsiccia back to the pan.
Mix all the ingredients together well, bring the rice pan to the boil and simmer slowly over a low to medium heat with the lid closed for 12 – 15 minutes, stirring occasionally. As soon as the rice is cooked and the liquid has almost completely absorbed, garnish the rice pan with a handful of basil leaves and season with salt and pepper to taste if necessary. Spread the salsiccia rice pan with vegetables on deep plates and serve. Have fun cooking!
