Potato Burger with Danish Remoulade Sauce

Ingredients for 4 Potato Burger:

…for the Danish remoulade sauce:

  • ½ glass mixed pickles (190 grams drained weight)
  • 50 grams of mayonnaise
  • 50 grams of sour cream
  • 1 teaspoon mustard
  • 1 teaspoon apricot jam
  • 1 dash of lemon juice
  • ½ teaspoon curry powder
  • ½ teaspoon turmeric
  • Sugar
  • Salt & pepper

…for the potato rosti:

  • 750 grams waxy potatoes
  • 1 large carrot
  • 1 onion
  • 100 grams of flour
  • 1 egg
  • Salt & pepper
  • Oil for frying

…for the burger patties:

  • 400 grams of ground beef
  • Pepper
  • Oil for frying

…other ingredients:

  • 2 tomatoes
  • ¼ cucumber
  • 4 large lettuce leaves
  • Crispy fried onions

Kitchen Helper/Gadgets:

  • Sieve
  • Blender
  • High vessel for mashing the pickles
  • Bowl or deep plate for the sauce
  • Whisk
  • Plate + kitchen paper to drain the rostis
  • Mixing bowl
  • Grater
  • 2 large pans
  • 2 tablespoons
  • Kitchen spatula

Instructions:

…for the Danish remoulade sauce:

Drain the pickles vegetables over a sieve and collect the dripping water. Give onions, cauliflower, carrots & gherkins (corn and peppers are not needed) into a tall vessel and puree with a blender together with 1 – 2 tablespoons of the collected dripping water until a lumpy paste, then set aside.

Stir together the pureed vegetables with 50 grams of mayonnaise, 50 grams of sour cream, 1 teaspoon of mustard, 1 teaspoon of apricot jam, 1 dash of lemon juice, ½ teaspoon of curry, ½ teaspoon of turmeric, a pinch of salt, a pinch of pepper and a pinch of sugar with a whisk until a smooth sauce, then season with salt, pepper, sugar and collected dripping water and set aside until serving.

…for the burger patties:

Give 400 grams of ground beef and a good pinch of pepper in a bowl and mix properly with your hands. Divide ground beef into 4 equal portions and form with your hands or a burger press to 4 burger patties.

…for the potato cakes:

Peel potatoes and carrots, then grate coarsely with a grater. Peel 1 onion and also grate to the potatoes. Then add 1 egg, 100 grams of flour and a good pinch of salt and pepper, mix everything with hands until well combined.

… other preparations:

Cut tomatoes and cucumber into thin slices.

…for the potato burger:

Heat up a large pan adding a neat dash of oil, once the oil is hot give 2 tablespoons of the potato mixture per potato cake into the pan, flatten slightly and sauté for about 3 – 4 minutes each side until brown and crispy. Then carefully lift the potato cakes out of the pan and drain on kitchen paper.

Meanwhile: Heat up a second pan adding a dash of oil and fry the burger patties for about 2 – 3 minutes each side until brown.

Spread a potato cake with 2 – 3 tablespoons of remoulade sauce, then garnish with a lettuce leaf, a burger pattie, tomatoes and cucumbers, then top again with 2 – 3 tablespoons of remoulade sauce and fried onions, finally lid with a second potato cake and serve.
