Club Sandwich with Chicken, Bacon & Cocktail Sauce

Ingredients for 4 servings:

  • 12 slices sandwich toast
  • 3 – 4 chicken breast fillets
  • 16 slices of bacon
  • 4 tomatoes
  • 4 hands of mixed salad
  • 8 slices cheese of your choice
  • Cocktail sauce to taste (here’s a homemade recipe)
  • Paprika powder
  • Salt & pepper

Kitchen Helper/Gadgets:

  • 2 baking dishes
  • Toaster, Grill pan or panini grill
  • Paper towels

Instructions:

…preparations:

Preheat oven to 200 degrees (top/bottom heat). Rinse chicken breast fillets under running water, then pat dry with kitchen paper and place in an ovenproof dish. Slice the tomatoes.

…for the chicken breast fillet:

Season chicken on both sides with salt, pepper and paprika spice & then cook/bake for about 20 minutes in the preheated oven. Get chicken out of the oven and cut into thin slices.

…for the tomatoes:

Spread tomato slices in a baking dish, garnish with cheese of your choice and give the tomatoes for browning in the oven for the last 5 minutes of chicken cooking-time.

…for the bacon:

Heat up a pan without adding oil or fat and fry the bacon slices on both sides for about a few minutes until crispy. Then lift bacon out of the pan and drain on paper towels.

…for the sandwich toasts:

Roast the sandwich toast in the toaster, a grill pan or panini grill.

…for the Club Sandwich:

Spread a sandwich toast with cocktail sauce, garnish with chicken breast strips, a few slices of bacon, the baked tomato and sprinkle with some lettuce.

Then top that with another slice of sandwich toast and again spread it with cocktail sauce, garnish with strips of chicken breast, a few slices of bacon, the baked tomato and some lettuce. Finish the Club Sandwich with another slice of sandwich toast, press it down slightly and serve.
