Instructions:
…preparations:
In a large bowl combine 200 grams flour, 3 eggs, 300 milliliters milk, 100 milliliters sparkling water, 1 sachet vanilla sugar & a pinch of salt. Mix together everything until well combined & you got a lump-free batter.
Break into pieces 250 grams of dark chocolate & place in a bowl. Next, heat up a saucepan adding 250 milliliters of cream over medium heat & bring to a boil. Once the cream starts to simmer, remove from heat & pour over the chocolate. Mix chocolate & cream until the whole chocolate is completely melted, then place the chocolate ganache in the fridge to cool down.
…for the pancakes:
Heat up a pan adding a small dash oil or a flake butter & then bake 10 – 12 pancakes one by one until the whole batter is used up. For that give a ladle batter into the hot pan, spread the batter evenly on the bottom by tossing the pan & bake for about 1 minute on each side over medium heat until golden brown.
Turn or flip the pancakes after 1 minute & bake until done on the other side. Lift the done pancakes out of the pan & stack the pancakes on top of each other on a plate, then allow them to cool down completely.
…for the pancake pie:
Get the chocolate ganache out of the fridge & whisk up with a mixer for 2 – 3 minutes until the ganache starts to get fluffy & slightly brighter. Next, stack pancakes & chocolate ganache alternately on a plate until all ingredients are used up.
Finally cut the pancake pie into pieces, garnish with a few berries & powdered sugar & serve. I wish you lots of fun baking!
