Tabbouleh is a salad from the Arabic and especially the Lebanese & Syrian cuisine. In Germany it is also referred to as bulgur salad, the Turkish variant is called Kisir & contains significantly more spices.
Tabbouleh is mainly made with bulgur (alternatively couscous), plain parsley, tomatoes, spring onions, olive oil & lemon juice. I wish you lots of fun cooking 😉

Ingredients for 4 servings:
…for the chicken:
- 4 chicken breast fillets
- Each a teaspoon of sesame seeds, sumac, cumin, marjoram & oregano
- Oil for frying & marinating
- Salt & pepper
…for the Tabbouleh Salad:
- 250 grams bulgur (alternatively couscous)
- 250 milliliters water
- 200 grams cherry tomatoes
- 4 – 5 spring onions
- 1 small cucumber
- 1 large carrot
- 100 milliliters olive oil
- 1 lemon
- 1 bunch fresh parsley
- A few sprigs fresh mint
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Mixing bowl for the tabbouleh salad
- Water heater
- Grater
- Lemon juicer
- Bowl or baking dish for marinating
- Frying pan for the chicken
Instructions:
…preparations for the chicken:
Put the chicken breast fillets in a bowl and season with 1 teaspoon each of sesame seeds, cumin, sumac, marjoram & oregano, also with a good pinch of salt & pepper. In addition, add a good shot of oil to the chicken and mix everything together until all spices have evenly distributed, then set aside until searing.
…preparations for the tabbouleh salad:
Bring to a boil 250 milliliters of water in an electric kettle. Then put 250 grams bulgur in a mixing bowl, pour in 250 milliliters of boiling water & cover with cling film for 10 – 15 minutes until the bulgur has absorbed all the water.
Next, cut 1 cucumber into fine cubes. Furthermore, halve or quarter cherry tomatoes depending on their size. Cut spring onions into small rolls and roughly grate 1 large carrot with a grater. Finally, pluck parsley and mint leaves from the stems and finely chop them with a knife.
…for the tabbouleh salad:
Loosen the bulgur with a fork and mix with the prepared salad ingredients, 100 milliliters of olive oil & the juice of a lemon. Season the salad with salt & pepper and set aside until serving.
…for the chicken:
Heat up a large pan adding a dash oil & sear the marinated chicken for about 2 – 3 minutes (depending on the thickness of the fillets maybe a bit longer) each side until brown & crispy. Lift the done chicken fillets out of the pan & cut into a bout 1 centimeter thick slices.
Serve the tabbouleh salad on deep plates & top with the chicken. I wish you lots of fun cooking 😉
