In today’s post, I’ll show you a quick & easy recipe for oriental bulgur salad (kisir) with tomatoes, cucumbers, spring onions & dried apricots.

Oriental Bulgur Salad (Kisir)

Ingredients for 1 bowl bulgur salad:

  • 250 grams bulgur
  • 200 grams cherry tomatoes
  • ¬Ĺ cucumber
  • 100 grams dried apricots
  • 3 – 4 spring onions
  • 1 large handful fresh parsley
  • 4 heaping tablespoons ajvar
  • 1 lemon
  • 1 teaspoon sambal oelek
  • Each a teaspoon of sumac, ground coriander & cumin
  • Olive oil
  • Salt & pepper

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Electric kettle
  • Cling film
  • Lemon juicer
  • Small bowl to stir together marinade



Bring to a boil 250 milliliters water in an electric kettle. Put 250 grams bulgur in a mixing bowl, pour in 250 milliliters of boiling water and cover with plastic wrap, then allow to rest for 10 – 15 minutes until bulgur has absorbed all the water.

Cut cherry tomatoes in halves or qurters depending on their size. Coarsely dice cucumber. Cut spring onions into fine rolls. Cut dried apricots into fine strips. Finely chop fresh parsley.

…for the dressing:

In a small bowl combine 4 heaping tablespoons ajvar along with the juice of a lemon, a good dash of olive oil, 1 teaspoon sambal oelek & 1 teaspoon each of sumac, ground coriander & cumin & mix together until all ingredients are well combined.

…for the bulgur salad:

Loosen the bulgur with a fork and mix with the prepared salad ingredients and the dressing. Season the bulgur salad with a pinch of salt & pepper and serve. The salad goes well with grilled meats, sausages or marinated grilled cheese. I wish you lots of fun cooking ūüėČ
