In one of my last posts, I showed you a recipe for multigrain bread rolls Today I’ll show you another bread roll recipe, for a super tasty & fluffy bread roll wheel with poppy seeds.
Alternatively, the rolls may also be sprinkled with, for example, sesame seeds, sunflower seeds, pumpkin seeds or grated cheese. Have fun baking!

Ingredients for 8 bread rolls with poppy seeds:
- 400 grams wheat flour
- 100 milliliters milk
- 100 milliliters water
- 50 grams melted butter
- ½ cube fresh yeast (about 20 grams)
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 egg + 1 egg yolk for brushing
- Poppy seeds for garnishing
- Additional flour for the countertop
Required kitchen gadgets, helper & preparations:
- Tall container for yeast water mixture
- Mixing bowl
- Mixer/Kitchen machine
- Kitchen towel
- Small bowl for melted butter
- Springform pan or pizza pan
…for the dough:
Crumble ½ cube fresh yeast (about 20 grams) into a tall container, add 1 teaspoon sugar, 100 milliliters lukewarm milk as well as 100 milliliters lukewarm water & stir together with a whisk or fork until yeast & sugar have completely dissolved.
Next, combine yeast-water mixture along with 400 grams flour, 1 egg & 1 teaspoon salt in a mixing bowl & knead with a food processor or a mixer with dough hook for about 4 – 5 minutes to a smooth dough. Form the dough into a ball, lay it back to the mixing bowl & allow to rest covered with a kitchen towel for 30 – 45 minutes in a warm place.
…for the bread rolls:
Grease a spingform pan or a pizza pan with some butter, also prepare a small bowl with 50 grams melted butter. Put the dough on a slightly floured worktop, briefly knead with your hands again & then cut with a knife into about 8 equal sized pieces.
Afterwards round each dough piece with circular movements under your palms into ball shape. Turn the dough balls one by one in melted butter & then place them in the prepared pan, for that put one roll centrally & the others with a bit distance to each other around the middle one.
Cover the bread rolls with a kitchen towel again & allow to rest for another 20 – 30 minutes in a warm place. Preheat oven at 200°C (top/bottom heat) in good time. Brush the bread rolls with egg yolk, also sprinkle with poppy seeds & then bake in preheated oven for about 20 – 25 minutes until golden & crispy.
Get the done bread rolls out of the oven, allow to cool a bit on a cooling rack or in the springform/pizza pan & then best serve still warm. Have fun baking!
