Instructions for the homemade burger buns:
Crumble ½ cube of yeast into a tall container. Pour in 250 milliliters of lukewarm water and 50 milliliters of lukewarm milk, also add 1 tablespoon of sugar and stir everything with a fork or whisk until the sugar and yeast have dissolved in the water and milk.
Next, take a mixing bowl and add the yeast-water-milk mixture together with 500 grams of flour, 1 egg, 50 grams of room temperature butter and 1 teaspoon of salt. Process all ingredients with a mixer or food processor for about 5 – 6 minutes to form a smooth and sticky dough.
Then place the dough on a well-floured work surface and knead it from the outside inwards and dust it with flour on all sides. Then form a ball out of the dough, put it back in the mixing bowl and cover it with a kitchen towel and let it rest for about 45 minutes until the dough has doubled in volume.
After the resting time, place the dough on a floured work surface and knead briefly again. Then cut 8 equal-sized pieces (for large burger buns) or 12 – 16 equal-sized pieces (for smaller burger buns) from the dough.
Form all pieces of dough into balls on a floured surface and place them on a baking tray lined with baking paper (with a little space between them). Cover the burger buns with a kitchen towel and let them rest for another 45 minutes until the buns have doubled in volume.
Finally, whisk an egg and brush it all over the risen burger buns, sprinkle with a few sesame seeds and then bake in a preheated oven at 200°C (top/bottom heat) for 15 – 20 minutes until golden brown. Have fun baking!
