Bifi Mini Pizzas

Ingredients for about 15 Bifi Mini Pizzas:

…for the dough:

  • 300 grams of flour
  • 150 milliliters of lukewarm water
  • ½ cube of yeast
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1 – 2 tablespoons of olive oil

…for the quick tomato sauce:

  • 100 – 150 grams of sieved tomatoes
  • ½ small onion
  • 1 small clove of garlic
  • 2 tablespoons of olive oil
  • ½ teaspoon of dried majoram
  • ½ teaspoon of dried basil
  • ½ teaspoon of dried oregano
  • ½ teaspoon of dried rosemary
  • ½ teaspoon of dried thyme
  • Sugar
  • Salt & pepper

…for the pizza topping:

  • About 125 grams of grated cheese (Gouda, Mozzarella or Emmental)
  • 2 – 3 Bifi Mini Salami

Kitchen Helper/Gadgets:

  • High vessel for stirring the yeast-water mixture
  • Whisk or fork
  • Mixing bowl
  • Food processor
  • Kitchen towel
  • Rolling pin
  • Pizza pan (28cm diameter) or Baking tray + parchment paper
  • High vessel to puree the tomato sauce
  • Blender
  • Knife
  • Coffee mug to cut out the pizza base

Instructions:

…for the pizza dough:

Crumble ½ cube of yeast into a large vessel, add 1 teaspoon of sugar & also pour in 150 milliliters of lukewarm water. Stir with a whisk or a fork until the yeast and sugar have dissolved completely.

Give 300 grams of flour into a mixing bowl, pour in the yeast-water mixture, also add 2 tablespoons of olive oil and 1 teaspoon of salt. Knead with your hands or a food processor to a smooth dough.

Then form a ball of the dough, give the ball back into the mixing bowl and sprinkle with a dash of olive oil. Rub the dough all around with oil and let rest/stand covered with a kitchen towel for about 30 – 45 minute in a warm place (possibly in the oven at 30°C).

…for the quick pizza sauce:

Peel onions and garlic and chop coarsely. Add onions and garlic along with 100 – 150 grams of sieved tomatoes and 2 tablespoons olive oil in a high vessel. Season with ½ teaspoon of marjoram, ½ teaspoon of basil, ½ teaspoon of oregano, ½ teaspoon of rosemary, ½ teaspoon of thyme, a pinch of sugar, a pinch of salt & a pinch of pepper. Puree using a hand blender to a smooth & creamy tomato sauce, then set aside.

…other preparations:

Cut salami into thin slices.

…for the mini pizzas:

Timely preheat the oven to 250°C (top/bottom heat). Give the dough after resting time onto the worktop & roll out with a rolling pin until thin and flat. Cut out small circles using a coffee mug & then place the dough circles on a pizza tray or a lined baking sheet.

Press with your fingers from the center to the edges to give the mini pizzas a small pizza crust, then spread each pizza with a tablespoon of tomato sauce. Afterwards top each pizza with a little of grated cheese and a few slices of salami. Bake in the preheated oven for about 8 – 10 minutes until golden brown. Get the ready baked mini pizzas out of the oven and serve them immediately. Bon Appetite!
