Steak Sandwich with Field Salad & Honey-Mustard-Mayonnaise

Ingredients for 4 servings:

  • 1 beef steak (about 400 grams)
  • 1 large baguette
  • 1 red onion
  • 50 grams field salad
  • 100 grams mayonnaise
  • 1 heaping teaspoon grainy mustard
  • ¼ lemon
  • 2 tablespoons honey
  • 3 tablespoons red wine vinegar
  • Oil for frying
  • Butter
  • Salt & pepper

Kitchen Helper/Gadgets:

  • Small bowl to mix the sauce
  • Aluminum foil
  • Kitchen paper
  • Knife
  • Large pan

Instructions:

Peel the red onion and cut into thin rings, then mix in a small bowl with about 3 tablespoons red wine vinegar & set aside until serving. Cut the baguette into 4 equal sized pieces. Preheat the oven to 110°C (top/bottom heat).

…for the beef steak:

Rinse the beef steak under running water and pat dry with kitchen paper. Then heat up a large pan adding a small dash of oil and sear the steak for 2 minutes on each side. Lift the steak from the skillet and cook on a grid in the middle of the preheated oven for about 30 minutes until medium.

…for the honey-mustard-mayonnaise:

Add 100 grams of mayonnaise to a bowl and mix with 1 heaping teaspoon of grainy mustard, the juice of ¼ lemon, about 2 tablespoons of honey and a good pinch of salt and pepper, then set aside until serving.

…for the Steak Sandwich:

After 30 minutes remove the beef steak out of the oven, wrap in a sheet of aluminum foil and allow to rest for 5 – 10 minutes. Slice up but not completely through the baguette pieces with a knife.

Reheat the steak pan adding a flake of butter & as soon as the butter starts to foam, brown the sliced up baguettes in the pan for a few minutes. With a knife cut the steak into thin strips after the resting period & season well with salt & pepper.

Spread the baguettes with some honey-mustard-mayonnaise, then cover with some field salad, steak strips and onions. Bon Appetite!
