  • A pinch of salt
  • Peel of ½ organic lemon

  • 200 milliliters cream
  • 50 grams powdered sugar

  • 1 sachet cream stabilizer
  • 1 small tube of green food coloring
  • 36 “Schokobons” or other sweets of your choice

  • High conatiner to beat stiff the cream
  • Spatula

Instructions:

…preparations:

Preheat the oven to 180°C (top/bottom heat). Line a muffin tin with paper cases. Finely grate ½ organic lemon.

…for the batter:

Mix together 125 grams of soft butter, 125 grams sugar, 1 sachet of vanilla sugar, a pinch of salt & the lemon peel with a mixer or a kitchen machine for about 2 minutes. Then add a total of 2 eggs in succession and mix in each egg separately for about 1 minute.

Mix a level teaspoon of baking powder with 250 grams of flour. Add the flour alternately with 75 milliliters of cream to the batter & stir in until all ingredients have been used up & you got a smooth & thick batter.

…for the muffins:

Give the muffin batter into the prepared tin, fill the molds only ⅔, because the muffins will rise up during baking. Then bake the muffins for about 20 minutes in a preheated oven until golden brown. Get the muffins out of the oven & allow them to cool completely on a wire rack.

…for the frosting:

Give the cream together with 1 sachet of vanilla sugar, 1 sachet of cream stabilizer and a small tube of green food coloring into a high container and beat until stiff for about 2 minutes, then briefly set aside.

Give 150 grams of cream cheese & 50 grams of powdered sugar into a mixing bowl and mix until creamy for about 1 minute. Then add the whipped cream and use a spatula to fold in.

Fill the frosting into a piping bag with star nozzle and spray polka dots onto each muffin to create a nest or basket. Decorate the nest with 3 “Schokobons” (or use other sweets of your choice) and then serve. Have fun baking!
