Homemade Chili Cheese Fries

Chili Cheese Fries are an American fast food dish. French fries are covered with a topping (for example Chili con Carne) and gratinated with cheese, as an alternative to grated cheese, there are also variants with cheese sauce.

In today’s post I show you a recipe for chili cheese fries with a topping of minced meat, black beans, corn & grated cheddar. I wish you lots of fun cooking 😉

Ingredients for 4 – 6 servings:

…for the french fries:

  • About 1 kilogram primarily waxy potatoes
  • ½ teaspoon chili powder
  • Salt & pepper
  • 2 – 3 tablespoons oil

…for the minced beef topping:

  • 300 grams minced beef
  • 1 can corn
  • 1 can black beans
  • 1 can chopped tomatoes
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon each cumin, ground coriander, paprika powder (noble sweet) 6 oregano
  • Salt & pepper
  • Oil for frying

…more ingredients:

  • 100 grams grated cheddar cheese
  • 1 – 2 spring onions for garnishing

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Kitchen towel
  • Baking sheet + parchment paper
  • Pasta strainer
  • Large pan for the minced beef topping
  • Spatula

Instructions:




…for the french fries:

Preheat the oven to 200°C (top/bottom heat). Peel potatoes and cut with a knife first in about 1 centimeter thick slices & then into 1 centimeter thick pens. Then transfer the fries to a pasta strainer and rinse under running water to wash off the excess potato starch.

Afterwards pat dry the potato pens thoroughly with a kitchen towel & place in a mixing bowl. Add 2 – 3 tablespoons of oil, ½ teaspoon of chilli powder & a pinch of salt & pepper to the fries & mix well until the oil and spices are evenly spread.

Arrange the marinated potato sticks on a baking sheet lined with baking paper and bake in a preheated oven for about 30 – 45 minutes (depending on the thickness of the fries) until golden brown. If necessary, turn the fries after about half of the baking time.




…for the minced beef topping:

Peel an onion and cut into thin strips. Also peel off 2 cloves garlic and finely chop. Pour off corn and black beans over a pasta strainer and rinse thoroughly, then allow to drain. Afterwards heat up a large pan adding a dash of oil and sweat onions and garlic for 1 – 2 minutes over medium heat until glassy, stirring occasionally.

Next, increase the heat slightly, add the minced meat & sauté for 4 – 5 minutes until crumbly, turning occasionally. Season the mixture with 1 teaspoon each cumin, ground coriander, paprika powder (noble sweet) & oregano, also add corn, black beans and 1 can of chopped tomatoes.




Stir in all ingredients & warm up briefly for about 1 minute. Finally, season the minced meat topping with salt & pepper, then remove from heat and set aside until serving.

…for the chili cheese fries:

Cut the spring onions with a knife into fine rolls and set aside. Take the done French fries out of the oven, push them a bit together in the middle of the tray and top the fries with the prepared minced meat mixture. Sprinkle with about 100 grams of grated cheddar cheese and gratinate in the oven for another 5 minutes.

Get the done chili cheese fries out of the oven, garnish with some spring onions and serve immediately. I wish you lots of fun cooking 😉

  1. … Rezept ist der Hammer. Ich habe nur die Hackfleischmischung nicht in den Ofen gegeben, weil ich Angst um den Ofen hatte 🙂 Aber ich denke, das hat keinen Unterschied gemacht. Es war wirklich sehr sehr lecker. Und mein Mann hat sich gefreut. Danke für das Rezept!
