The cheesecake or quark cake is mainly baked from curd (or cream cheese), eggs, butter & sugar.
In today’s post, I’ll show you a variation in which half of the batter is colored with cocoa powder. By alternately filling the light & dark batter into the springform pan, a zebra pattern is created after baking. Have fun baking!

Zebra Cheesecake
Ingredients for 1 Zebra Cheesecake:
…for the shortcrust pastry:
- 250 grams flour
- 125 grams sugar
- 125 grams cold butter (in small pieces)
- 1 egg
- 1 sachet vanilla sugar
- ½ sachet baking powder
…for the cheesecake filling:
- 1 kilogram curd
- 250 grams sugar
- 125 grams soft butter
- 5 eggs
- 2 tablespoons cocoa powder
Required kitchen gadgets, helper & preparations:
- Mixing bowl(s)
- Springform pan (26cm diameter)
- Mixer

Grease the springform pan with a flake of butter and sprinkle with 1 tablespoon of flour (maybe a little more), then set aside. Timely preheat the oven to 180°C (top/bottom heat).
…for the shortcrust:
Next, put all the ingredients for the shortcrust pastry in a mixing bowl and knead with your hands for 3 – 4 minutes to a smooth dough. Transfer the dough to the prepared springform pan & line the bottom and the sides evenly thick with the dough.

Baking Zebra Cheesecake
…for the filling:
Put 125 grams soft butter, 250 grams sugar, 1 packet vanilla sugar and 5 eggs into a mixing bowl and beat until fluffy with a mixer for about 2 – 3 minutes. Next, add 1 kilogram of curd and mix until everything is well combined.
Then transfer half of the curd mixture into a separate bowl, add 2 tablespoons of cocoa powder to the quark mixture and stir in until the mixture has a uniform chocolaty color.

For the zebra pattern fill the white & chocolate curd mixture alternately in the center of the prepared springform pan. This means first place 1 large spoonful of the dark batter in the center of the springform pan and afterwards centrally place 1 large spoonful of the light batter on top of the dark one.

Next, put 1 large tablespoon of dark batter on top of the light batter and repeat that until light & dark curd mixture are used up. Then bake the cake for 60 minutes in a preheated oven.
Get the done cake out of the oven, allow to cool and serve. I wish you lots of fun baking!
