Today I’ll show you a simple & easy recipe with tortellini from the fridge. The tortellini are cooked according to the packing instructions & then mixed with a homemade pesto rosso and sauteed zucchini cubes.

The dish is easy to cook & on the table in a maximum of 25 minutes including preparations. I wish you lots of fun cooking 😉

Simple Tortellini Stir-Fry with Zucchini

Ingredients for 2 servings:

  • 500 grams of cheese tortellini (from the refrigerated rack)
  • 100 milliliters vegetable stock
  • 1 large zucchini
  • 200 grams of cherry tomatoes
  • 1 onion
  • 75 grams of dried tomatoes + 3 – 4 tablespoons of tomato oil
  • 50 grams of roasted peppers (from the glass)
  • 1 tablespoon chopped almonds
  • 1 tablespoon grated Parmesan
  • 1 small clove garlic
  • Salt & pepper
  • Oil for searing

Required kitchen gadgets, helper & preparations:

  • High container for pureeing
  • Blender
  • Pan for searing
  • Pot for the tortellini
  • Colander



For the pesto combine 75 grams of dried tomatoes, 50 grams of roasted peppers, 3 – 4 tablespoons oil from the tomatoes, 1 tablespoon chopped almonds, 1 tablespoon of grated Parmesan & a pinch of pepper in a tall container & then puree everything with a blender until a lumpy pesto.

Cut the zucchini into small cubes. Peel onion & garlic & finely chop. Quarter or halve cherry tomatoes depending on their size. Bring a large pot of salted water to a boil and cook the tortellini for about 2 – 3 minutes, then use a pasta strainer to pour off the water and set tortellini aside covered with a lid.

…for the tortellini stir-fry:

Heat up a large pan adding a dash of oil, add the onions & garlic to the pan & sweat for about 2 – 3 minutes over medium heat until glassy. Next, add the zucchini cubes and gently roast for another 3 – 4 minutes, stirring occasionally.

Finally, add the cherry tomatoes, tortellini, the prepared pesto & 100 milliliters of vegetable stock to the pan, mix well until all ingredients have evenly distributed & allow the liquid to boil down almost completely.

Then remove the pan from heat, arrange the tortellini on deep plates and serve immediately. I wish you lots of fun cooking 😉
