In today’s post, I’ll show you a simple & easy recipe for a spicy rice stir-fry with bell peppers & ground beef.

The recipe takes a maximum of 35 minutes including preparation & all you need for cooking is a large frying pan where in which all ingredients are seared. Have fun cooking 🙂

Simple Rice Stir-Fry with Bell Peppers & Ground Beef

Ingredients for 4 servings:

  • 500 grams ground beef
  • 200 grams basmati rice
  • 2 large bell peppers
  • 1 can chopped tomatoes
  • 1 large onion
  • 2 cloves garlic
  • A large handful fresh parsley
  • 1 teaspoon paprika powder (sweet)
  • 1 teaspoon paprika powder (spicy)
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • Salt & pepper
  • Oil for frying

Required kitchen gadgets, helper & preparations:

  • Large frying pan

Instructions:

Peel off onion & garlic & chop finely. Deseed bell peppers & cut into bite-sized pieces. Finely chop parsley & set aside until further use.

…for the stir-fry:

Heat up a large pan adding a dash of oil & fry onions and garlic over medium heat for about 2 – 3 minutes until glassy, stirring occasionally. Next, add 500 grams ground beef & sauté for another 3 – 4 minutes until crumbly, turning or stirring occasionally.

Season the ground beef mixture with a teaspoon each of paprika powder (sweet), paprika powder (spicy), cumin, turmeric & ground coriander, then add 200 grams basmati rice & the bell pepper pieces to the pan. Mix everything together until all ingredients and spices have spread evenly & sauté for about 1 minute.




Then add 1 can chopped tomatoes & pour in 800 milliliters vegetable stock, bring to a boil & then allow to simmer for about 20 minutes over low to medium heat until the rice is cooked & the liquid has been completely absorbed.

Finally stir in the chopped parsley & season with salt & pepper to taste. Remove the pan from heat & dish up the rice stir-fry on deep plates. I wish you lots of fun cooking 😉
