Let us continue the Christmas bakery! In today’s post, I’ll show you a quick & easy recipe for Florentine slices.

The Florentine slices consist of a short crust pastry & a caramelized almond layer with sliced and slitted almonds. Have fun baking 😉

Baking Florentine Slices

Ingredients for about 24 cookies:

…for short crust pastry:

  • 250 grams flour
  • 125 grams cold butter (cut into small pieces)
  • 75 grams sugar
  • 2 tablespoons water
  • 1 sachet vanilla sugar
  • ½ teaspoon baking powder

…for almond layer:

  • 100 grams slices almonds
  • 100 grams slitted almonds
  • 100 milliliters cream
  • 50 grams sugar
  • 50 grams butter
  • 50 grams honey
  • 50 grams candied fruits (for example cherries)
  • 1 sachet vanilla sugar

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Rolling pin
  • Small baking sheet + parchment paper
  • Small pot or saucepan for almond mixture
  • Whisk
  • Spatula
  • Knife

Instructions:




…preparations:

Line a small baking sheet with parchment paper. Coarsely chop candied fruits & set aside until further use. Preheat the oven to 180°C (top/bottom heat) in good time.

…for shortcrust pastry:

In a large mixing bowl, combine 250 grams flour, 125 grams cold butter (cut into small pieces), 75 grams sugar, 1 sachet vanilla sugar, ½ teaspoon baking powder & 2 tablespoons water & knead together with your hands for 3 – 4 minutes until a smooth shortcrust pastry.

Roll out the dough with a rolling pin on a lightly floured work surface to the size of the baking tray & then carefully lift it onto the prepared baking tray and evenly line it to the corners. Bake the shortcrust pastry for 10 minutes in a preheated oven.




…for almond layer:

Add 50 grams butter, 50 grams sugar, 50 grams honey & 1 packet of vanilla sugar to a small saucepan & melt over medium heat. Bring the butter sugar mixture to a boil & allow to simmer for a few minutes, stirring occasionally, until the mixture has caramelized a bit & turned into a light brown color.

Next, carefully pour in 100 milliliters cream & stir together with a whisk. Finally add 100 grams each of sliced & slitted almonds and simmer for another 1 – 2 minutes until mixture lightly thickens.




…for Florentine slices:

Get the shortcrust pastry from the oven after 10 minutes and spread the hot almond mixture evenly on it. Distribute the candied fruits or cherries on top of the almond layer and then bake the Florentine slices in the oven until golden brown for another 10 – 12 minutes.

Remove the baking tray from the oven after 12 minutes, allow to cool completely & cut the Florentines into 24 equal squares and serve afterwards. I wish you lots of fun baking!
