Homemade Vanilla Ice Cream Sandwiches

An ice cream sandwich is an ice cream dessert consisting of ice cream between two wafer or cookie layers. The ice cream for this sandwiches can be made at home, but it also works well with store bought ice cream.

In today’s post, I’ll show you a recipe for an ice cream sandwich with vanilla ice cream between 2 layers of baked cookie dough. Have fun baking!

Ingredients for 6 Ice Cream Sandwiches:

…for cookie dough:

  • 200 grams flour
  • 150 grams brown sugar
  • 125 grams soft butter
  • 1 egg
  • 1 sachet vanilla sugar

…for vanilla ice cream:

  • 400 milliliters cream
  • 300 milliliters milk
  • 100 milliliters vanilla syrup
  • 100 grams chocolate chips
  • 100 grams sugar
  • 1 tablespoon locust bean gum (optional)

Required kitchen gadgets, helper & preparations:

  • Mixing bowl for cookie dough
  • Mixer
  • Sieve
  • Spatula
  • Small baking sheet (Dimensions here: about 35cm x 20cm) + baking paper
  • Clean kitchen towel
  • Mixing bowl for ice cream mixture
  • Ice cream maker
  • Dough card
  • Kitchen board

Instructions:




…for cookie dough:

Preheat the oven to 180°C (top/bottom heat) in good time. Line a small baking sheet with parchment paper, alternatively grease with butter. For the dough put 150 grams brown sugar, 125 grams soft butter, 1 egg & 1 sachet vanilla sugar into a mixing bowl and stir together with a mixer for 2 – 3 minutes until creamy.

Next, sift 200 grams of flour to the dough and mix in with a spatula until the flour is completely incorporated. Spread the dough onto the prepared baking tray up to the corners & then press on a second baking paper on top of the dough and brush over it a few times to smooth down the dough surface as even as possible.




Put the baking sheet into the preheated oven and bake for approx. 15 minutes, then get out of the oven and allow to cool. Carefully overthrow the cookie dough onto a clean kitchen towel, remove the baking paper and use a knife to cut into 2 equal-sized dough pieces.

…for vanilla ice cream:

In a mixing bowl combine 400 milliliters cream along with 300 milliliters milk, 100 milliliters vanilla syrup, 100 grams sugar & 1 tablespoon locust bean gum & mix with a whisk or blender for 1 – 2 minutes until sugar & locust bean gum have completely dissolved.

Pour the ice cream mixture into the ice cream maker and let it freeze until creamy for about 30 – 45 minutes. Alternatively, the ice cream mixture can also be stored in the freezer for 5 – 6 hours by stirring the ice cream mixture every 45 – 60 minutes with a whisk. Just before the ice cream is done, stir in 100 grams of chocolate chips or chunks and then continue withe the following steps as fast as possible to avoid the ice cream to melt.

Place one of the two dough plates on a kitchen board, spread the ice cream evenly on it and gently press the second dough sheet onto the ice cream. Finally, with a dough card drive along the edges and evenly distribute the excess ice cream between the two dough plates.

Store the ice cream sandwich in the freezer for 3 – 4 hours (preferably overnight) & allow to harden. Then remove from the freezer, cut with a knife into 6 large or 12 small sandwiches & serve immediately. Have fun baking!
