In today’s post, I’ll show you a super easy & simple recipe for a delicious oven baked lemon chicken with roast vegetables.

For this recipe I use chicken thighs, potatoes, zucchini & red onions, which merge together with a lemon marinade in the oven to a delicious dish. Have fun cooking!

Oven Baked Lemon Chicken

Ingredients for 4 servings:

  • 4 chicken thighs
  • 750 grams potatoes
  • 1 large zucchini
  • 3 – 4 red onions
  • 3 organic lemons
  • About 75 milliliters olive oil
  • 2 cloves garlic
  • 1 heaping tablespoon mustard
  • 1 heaping tablespoon honey
  • 1 teaspoon oregano
  • Salt & pepper
  • 3 – 4 sprigs rosemary

Required kitchen gadgets, helper & preparations:

  • Mixing bowl
  • Grater
  • Garlic crusher
  • Lemon juicer
  • Whisk
  • Baking sheet + baking paper


…for lemon chicken:

Finely grate 2 lemons and juice. Put lemon zest and juice to a mixing bowl, add 2 crushed cloves garlic, about 75 milliliters of olive oil, a heaping tablespoon each of mustard & honey, 1 teaspoon oregano and a generous pinch of salt & pepper. Mix all ingredients with a whisk and marinate the chicken thighs with the mixture.

Lay out a baking sheet with baking paper and preheat the oven to 200°C (top/bottom heat) in good time. Next, wash 750 grams of potatoes & cut into wedges without removing peel. Peel off red onions and roughly quarter them. Cut the zucchini into slices about 1 centimeter thick, and also slice up 1 lemon.

Place the chicken thighs on the prepared baking tray with a bit distance to each other, then turn the vegetables in the rest of the marinade and spread them around the thighs. Place the lemon slices on the chicken thighs, spread a few sprigs of rosemary between the vegetables and put everything in the preheated oven for about 60 minutes.

Take the finished chicken thighs out of the oven, spread them on plates & serve along with the vegetables & lemon stock.
