Peel pumpkin if needed, remove seeds and weigh 400 grams of pumpkin pulp. Cut the pumpkin pulp roughly into pieces with a knife and cover it with water in a saucepan. Bring the water to a boil over medium heat and cook pumpkin gently for about 5 to 6 minutes.
After about 5 minutes, drain everything over a pasta strainer, allow to steam off shortly & then put pumpkin back to the saucepan. Process the pumpkin into a puree with a blender and allow to cool down.
…for pumpkin bread:
Put pumpkin puree together with 500 grams flour, 50 grams soft butter, ½ cube of yeast, a dash of pumpkin seed oil, 1 teaspoon salt, 1 teaspoon sugar & ½ teaspoon nutmeg into a mixing bowl and knead together with a food processor or your hands for 5 – 6 minutes until a smooth dough.
Line a baking tray with baking paper. Shape the dough with your hands into a round or oval loaf of bread, place on the baking tray, sprinkle with some flour and allow to rest covered with a kitchen towel for about 45 minutes in a warm place until the dough volume has increased significantly.
Preheat the oven to 220°C (top/bottom heat) in good time. Cut the bread 3 – 4 times at an angle after the resting period and then bake for about 30 minutes in the preheated oven. If the bread gets too dark, simply put a sheet of baking paper over the bread and bake to the end.
Get the done bread out of the oven, allow to cool on a cooling rack and then serve immediately. Have fun baking!
