A sandwich cookie is usually a round cookie consisting of 2 crispy layers and a creamy filling. The most famous sandwich cookies: Prinzenrolle & Oreo Cookies.

In today’s post, I’ll show you how to bake a giant Sandwich Cookie with chocolate flavor at home. Have fun baking!

Ingredients for 1 Homemade Giant Chocolate Sandwich Cookie:

…for cookies:

  • 350 grams flour
  • 225 grams cold butter
  • 200 grams powdered sugar
  • 50 grams cornstarch
  • 1 egg
  • 1 sachet vanilla sugar
  • A pinch of salt

…for chocolate filling:

  • 400 grams milk chocolate
  • 150 milliliters cream
  • 100 grams dark chocolate

Required kitchen gadgets, helper & preparations:

  • Mixing bowl for the shortcrust pastry
  • Cling film
  • Baking paper
  • Rolling pin
  • Cake ring (size adjustable)
  • Knife, chopstick & toothpick to model the decorations
  • Baking tray
  • Saucepan or small pot for chocolate filling

Instructions for the Homemade Giant Sandwich Cookie:




…for the shortcrust pastry:

Put all ingredients for the cookie dough in a mixing bowl and knead with your hands for about 4 – 5 minutes until smooth. Then halve the dough, wrap both parts into cling film and put in the fridge for about 1 hour.

After about 1 hour, get the dough out of the fridge, in succession wrap each half of dough between 2 sheets of baking paper and roll out about 1 centimeter thick with a rolling pin. Cut out the dough with the help of a cake ring (20cm diameter) circularly, remove the excess dough and put aside.




…for cookies:

For the decorations, first make small notches with a knife back on the edge of the two circles of dough at a distance of about ½ centimeter. Next, draw the logo or pattern on the cookies with the help of a toothpick, chopstick & knife, for that it is best to watch my video below.

Then bake the cookies one after the other in a preheated oven at 160°C (top/bottom heat) for approx. 30 – 35 minutes until golden brown. Afterwards take the cookies out of the oven and allow them to cool completely on a cooling rack.




…for chocolate filling:

Put 400 grams of whole milk chocolate, 100 grams of dark chocolate & 150 milliliters of cream in a small saucepan & melt over low heat with a constant stir, then pull the saucepan from heat & allow the chocolate mixture to cool slightly.

Next, place one of the two cookies on a kitchen board, arrange a cake ring with a diameter of 18cm on it & additionally put a strip of baking paper into the cake ring. Pour in the melted chocolate filling & allow to harden for about 1 hour at room temperature.

Finally remove the cake ring and the baking paper & carefully press the second cookies onto the chocolate. Allow the done sandwich cookie to harden completely and serve. Have fun baking!
