Lemon Almond Cake (no flour)

A few months ago I showed you a recipe for a delicious lemon cake with icing, but in times of the “corona crisis” flour seems to be waffle goods in many supermarkets.

In order not to miss out a delicious cake this time, I have a recipe for a lemon almond cake without any flour today. Instead of flour this cake is baked with ground almonds (alternatively other ground nuts). Have fun baking 😉

Ingredients for 1 Lemon Almond Cake (no flour):

  • 6 eggs
  • 300 grams ground almonds
  • 125 grams sugar
  • 50 grams sliced almonds
  • 2 organic lemons
  • 1 sachet vanilla sugar
  • Powdered sugar to dust

Required kitchen gadgets, helper & preparations:

  • Kitchen machine or mixer
  • Mixing bowl
  • Whisk
  • Springform pan (28cm)
  • Baking paper
  • Fine grater

Instructions:

Preheat the oven to 180°C (top/bottom heat) in good time. Line a springform pan with baking paper & possibly grease the sides with a bit butter, then set aside. Finely grate the zest of 2 organic lemons & also set aside.

Next, put 6 eggs, 125 grams of sugar, 1 sachet of vanilla sugar & the lemon zest in a mixing bowl & beat everything with a blender or food processor for 2 – 3 minutes until nice & fluffy.




Then add 300 grams of ground almonds (alternatively, ground hazelnuts or other nuts would also work well here) to the egg mixture & fold in with a whisk until all ingredients are evenly distributed.

Pour the done batter into the prepared springform pan, finally spread 50 grams of sliced almonds on top of the batter and then slide the cake into the preheated oven for 20 – 25 minutes.




Take the done lemon almond cake out of the oven & allow to cool down a bit. Loosen the springform pan, dust the cake with a little powdered sugar & then cut into pieces and serve. Have fun baking!
