A one pot pasta is cooked super quickly and suitable for anyone who has little time to prepare their meals. In the past few weeks I have tried recipes more and more and have already introduced you to some variations, such as pasta with spinach sauce or the simple one pot lasagna.

In today’s post I will show you a colorful one pot pasta with lots of vegetables, the pasta is refined with grated Parmesan cheese and freshly ground pepper. Have fun cooking!

Colorful One Pot Pasta with Kohlrabi, Carrots & Peas

Ingredients for 4 servings:

  • 500 grams fusilli pasta (or any other pasta shape of your choice)
  • 500 milliliters water
  • 500 milliliters milk
  • 200 milliliters cream
  • 200 grams peas (frozen)
  • 2 large carrots
  • 1 head of kohlrabi
  • 1 large onion
  • 2 – 3 cloves garlic
  • 50 grams of Parmesan cheese
  • A teaspoon each of rosemary & thyme
  • Salt & pepper
  • Oil for frying

Required kitchen gadgets, helper & preparations:

  • Large pan or pot with lid

Instructions:

Peel onion & garlic & chop finely. Peel the carrots, quarter them lengthways and cut them into 1cm pieces. Peel kohlrabi & cut into cubes about 1 centimeter in size. Get the peas out of the freezer and let them thaw.

Next, heat up a large pan with a dash of oil, add the onions and garlic to the pan & sweat for 2 – 3 minutes over medium heat, then add the carrots and kohlrabi and fry briefly with turning.




When that’s done, add 500 grams of fusilli pasta to the pan & also pour in 500 milliliters each of water and milk as well as 200 milliliters of cream. Season the pasta with 2 teaspoons of salt and 1 teaspoon each of thyme and rosemary & then give everything a good stir and bring to a boil.

Allow to the pasta to simmer gently with the lid closed for about 10 – 12 minutes over low to medium heat, stirring occasionally from time to time, so that all ingredients are well distributed and nothing can burn to the bottom of the pan.




As soon as the fusilli are cooked & the liquid has almost completely absorbed, season the one pot pasta with freshly ground pepper to taste, also add the frozen peas & 50 grams grated Parmesan cheese & stir well one last time, then pull the pan off the heat. Spread the one pot pasta on deep plates and serve immediately. Have fun cooking!
