Struwen are small yeast pancakes that are traditionally eaten on Good Friday, especially in the Münsterland region, but also in areas of the Lower Rhine. Raisins are usually added to the yeast dough.

Depending on the taste, the struwen are rolled in sugar before consumption or just sprinkled with powdered sugar. Applesauce is suitable as a side dish. Have fun baking!

Baking Munsterlander Struwen

Ingredients for about 15 “Struwen”:

  • 500 grams flour
  • 375 milliliters lukewarm milk
  • 100 grams raisins
  • 1 tablespoon sugar
  • ½ cube fresh yeast
  • 1 egg
  • A pinch of salt
  • Oil for frying
  • Sugar or powdered sugar for dusting
  • Apple sauce for serving

Required kitchen gadgets, helper & preparations:

  • Tall container for yeast water mixture
  • Whisk
  • Mixing bowl
  • Kitchen machine or mixer
  • Kitchen towel
  • Large frying pan
  • Plate + kitchen paper for draining

Crumble ½ cube of yeast into a tall container, add 1 tablespoon of sugar as well as 375 milliliters of lukewarm milk & stir together everything with a whisk until the yeast and sugar have completely dissolved.

Next, put the yeast-milk mixture along with 500 grams of flour, 100 grams of raisins, 1 egg & a pinch of salt into a mixing bowl & mix with a food processor, a mixer with a dough hook or a wooden spoon until all ingredients are well combined & you got a sticky dough, then cover the dough with a kitchen towel & allow to rest in a warm place for 45 – 60 minutes.




After the resting period, heat up a large pan with plenty of oil (the bottom of the pan should be completely covered), give the dough by tablespoons into the pan, flatten it a little bit & deep-fry for 2 – 3 minutes on each side over medium heat until golden brown.

Lift the done “Struwen” out of the pan & allow to drain on kitchen paper, then roll them still hot in sugar or dust with icing sugar. Serve the yeast dough pancakes with applesauce. Have fun baking!
