In today’s post I will show you a recipe for delicious oven-baked cutlets with onions & gratinated with cheese. Have fun cooking!
Cooked/Baked today: Gratinated Pork Schnitzel with Onions

Ingredients for 4 servings:
- 800 grams pork loin (alternatively topside)
- 100 grams breadcrumbs
- 50 – 75 grams flour
- 1 large egg
- 1 heaping teaspoon sweet paprika
- 4 onions
- 150 grams grated cheese
- Oil for frying & sprinkling
- Salt & pepper
Required kitchen gadgets, helper & preparations:
- Meat tenderizer or small pan
- Cling film
- Baking sheet + baking paper
- 3 deep plates for “breading line”
- Large frying pan
Instructions:

Preheat the oven to 200°C (top/bottom heat) in good time. Line a baking sheet with baking paper. Cut pork loin into 4 equal sized slices, wrap pork cutlets in succession between 2 sheets of cling film and gently tenderize with a meat tenderizer or plate iron (alternatively with a small pan) until the meat surface has increased slightly.
Season the tenderized cutlets with salt & pepper to taste. Next, provide 3 deep plates for the “breading line”, one plate with flour, another with 1 large egg (whisked up) and the last with breadcrumbs. Mix the breadcrumbs with 1 heaping teaspoon of paprika powder.
Next turn the schnitzels in the flour first, then pull it through the whisked egg & finally turn in breadcrumbs, while gently pressing the breadcrumbs. Lay the ready-breaded schnitzels side by side on the prepared baking tray and drizzle with a good dash of oil. Bake the schnitzels in the preheated oven for about 10 – 12 minutes until golden brown and crispy.
Meanwhile peel off 4 onions and cut into strips. Then heat up a large pan with a good dash of oil and sweat the onions until golden for about 10 minutes, turning occasionally. After 12 minutes, take the baking sheet with the schnitzels out of the oven, spread the onions over them & season everything with a good pinch of salt and pepper.
Finally, sprinkle the schnitzels with 150 grams of grated cheese & put them back to the oven for another 5 – 6 minutes to gratinate (possibly use the grill function). Take the oven-baked schnitzels out of the oven and serve along with French fries. Have fun cooking!
