No Bake Strawberry Cake with Cornflakes Base

Suddenly visit at the door or forgotten a birthday? No problem, this strawberry cake is made super fast & the whole thing thanks to the chocolate cornflakes base without baking.

The cake is topped with a cream made from whipping cream & sour cream and fruity strawberries, that’s about it. Have fun baking!

Ingredients for a springform pan with 26cm diameter:

…for cake base:

  • 200 grams milk chocolate
  • 100 grams cornflakes
  • 100 grams chopped almonds

…for cream & toppings:

  • 750 grams fresh strawberries
  • 250 grams heavy sour cream or creme fraiche
  • 200 milliliters cream
  • 1 sachet cream stabilizer
  • 1 sachet vanilla sugar
  • About 25 grams white chocolate

Required kitchen gadgets, helper & preparations:

  • Mixing bowl for cornlakes mixture
  • Springform pan with 26cm diameter + baking paper
  • Mixer
  • Mixing bowl for cream

Instructions:




…for cornlakes chocolate base:

Melt 200 grams of whole milk chocolate over a water bath or in the microwave. Then put the melted chocolate along with 100 grams of cornflakes & 100 grams of chopped almonds in a mixing bowl & stir together until all the ingredients have been evenly distributed.

Line a springform pan (26cm diameter) with baking paper, add the chocolate cornflakes mixture to the springform pan & press down the cornflakes mixture as best & even as possible. Put the springform pan in the fridge for 10 – 15 minutes & allow the chocolate to harden.




…for cream & strawberry cake:

For cream put 200 milliliters whipping cream, 250 grams heavy sour cream (or creme fraiche) & 1 sachet each of cream stabilizer & vanilla sugar into a mixing bowl & beat until stiff for about 1 – 2 minute with a blender. Wash 750 grams fresh strawberries & cut off the green stem base. Coarsely chop 25 grams white chocolate with a knife.

Transfer prepared cream into the springform pan & spread evenly on top of the cooled cake base. Next press the strawberries evenly distributed into the cream & finally garnish the cake with the chopped chocolate. Next, dish up the cake immediately or store in the fridge until serving.
