A lasagna is a layered casserole dish of Italian cuisine and consists of pasta sheets, ground meat & béchamel sauce and finally topped & gratinated with cheese.
In today’s post, I’ll show you a variant as a soup, all ingredients are cooked in one pot to create a delicious lasagne soup. Have fun cooking!

Ingredients for 6 – 8 servings:
- 1,25 liters vegetable or meat stock
- 500 grams ground beef
- 500 milliliters sieved tomatoes
- 1 bunch or 500 grams of soup vegetables (carrots, celery & leeks)
- 150 milliliters red wine
- 10 lasagna sheets
- 1 cup creme fraiche
- A handful fresh basil leafs
- 1 large onion
- 2 – 3 cloves garlic
- 1 heaping tablespoon tomato paste
- 1 heaping tablespoon Italian herb mixture
- Oil for frying
- Salt & pepper

Peel off onion & garlic & chop finely. Peel the carrots & celery from the soup vegetables & cut into cubes. Clean the leek, cut in half lengthways & cut into strips. Next, heat up a large pan or pot with a good dash of oil, add 500 grams of ground beef & fry over medium to high heat until crumbly for about 4 – 5 minutes, stirring occasionally.
Then add the prepared vegetables & fry for another 4 – 5 minutes, turning occasionally. When that’s done add 1 heaping tablespoon of tomato paste, stir in & briefly toast, then deglaze everything with 150 milliliters of red wine & allow the wine boil down almost completely while stirring.
Next, add 1.25 liters of vegetable or meat stock & 500 milliliters of sieved tomatoes, season everything with 1 heaping tablespoon of Italian herb mixture and a generous pinch of salt & pepper to taste & then break the lasagne sheets into pieces & add to the soup as well.
Briefly stir in the lasagna sheets so that all noodles are covered with sauce & then allow to simmer gently over low heat for 10 – 15 minutes until the pasta is cooked & the vegetables have reached the desired consistency, stirring every now and then.
Finally, add 1 cup of creme fraiche to the pan & stir into the soup, also add a handful of fresh basil leaves & then distribute the lasagna soup on plates & serve garnished with a little grated Parmesan cheese. Have fun cooking!
