Simple Cauliflower Curry with Chickpeas

A curry is a dish of South Asian and Southeast Asian cuisine. The base for the curry forms a creamy sauce with different spices such as turmeric, cumin, coriander, chili, garlic or ginger.

In today’s post I will show you a quick & easy curry recipe with cauliflower & chickpeas in a delicious sauce made from coconut milk & chopped tomatoes. Have fun cooking!

Simple & Easy Cauliflower Curry with Chickpeas

Ingredients for 4 servings:

  • 1 large head cauliflower
  • 1 can chickpeas
  • 1 can coconut milk
  • 1 can chopped tomatoes
  • 1 large onion
  • 2 cloves garlic
  • 1 small piece ginger
  • A heaping teaspoon each of curry & sweet paprika powder
  • Salt & pepper
  • Oil for frying
  • Fresh cilantro or parsley for ganish
  • Cooked rice for serving

Required kitchen gadgets, helper & preparations:

  • Large frying pan or wok
  • Colander to drain chickpeas

Instructions:

Peel off onion & garlic & chop finely. Peel ginger & also finely chop it. Divide the cauliflower into fine florets or roughly chop it into bite-sized pieces with a knife. Pour off the chickpeas over a pasta strainer, rinse thoroughly & allow to drain.

Heat up a large pan or wok with a good dash of oil, add onions, garlic & ginger to the pan & sweat until translucent for 2 – 3 minutes over medium heat, turning occasionally. Next, add a heaping teaspoon each of curry powder as well as sweet paprika powder & also add the cauliflower florets & allow to roast briefly while stirring.




Then stir in the drained chickpeas, 1 can of chopped tomatoes & 1 can of coconut milk & bring the cauliflower curry to a boil, afterwards allow to simmer gently for 10 – 15 minutes over low to medium heat until the cauliflower has reached the desired consistency.

Finally, season everything with a good pinch of salt and freshly ground pepper & serve the curry along with good portion of cooked rice on deep plates & garnish everything with a little chopped coriander or parsley. Have fun cooking!
