…for veggie halloumi kebab:
Wash and core the peppers & cut into bite-sized pieces. Peel the red onion & cut into strips. Quarter the zucchini lengthways & cut into pieces. Clean the mushrooms & halve or quarter depending on the size. Cut the iceberg lettuce into thin strips. Cut the flatbread into 4 equal pieces & possibly briefly bake or roast.
Cut the halloumi into thin slices with a knife, season with smoked paprika powder & set aside. Put all ingredients for the kebab sauce (see list of ingredients above) in a bowl & stir together, season with salt & pepper, then set aside until serving.
Heat up a large pan or wok with a good dash of oil, add the prepared vegetables to the pan & sauté for 5 – 6 minutes over medium to high heat, turning occasionally.
Afterwards season the vegetables with 1 teaspoon each of cumin, sweet paprika powder & oregano as well as a good pinch of salt & pepper, stir everything together until well combined & then remove from the stove & set aside until serving.
For the halloumi, heat up a second pan with a dash of oil, add the halloumi slices to the pan & sear until brown and crispy over medium to high heat, turning occasionally.
Then assemble the halloumi veggie kebab as you wish, slice up the flatbread (possibly roast or toast it before dishing up) and fill it with sauce, iceberg lettuce, vegetables & halloumi. Good Appetite!
