A few weeks ago I showed you a delicious pasta with vegetarian mushroom bolognese sauce, today there is another vegetarian recipe – we’re cooking tagliatelle with a creamy avocado pesto.

The pesto sauce consists mainly of avocado, basil, parmesan & roasted pine nuts, plus a good dash of olive oil. Have fun cooking!

Ingredients for 2 servings:

  • 250 grams pasta (for example tagliatelle oder spaghetti)
  • 200 grams cherry tomatoes
  • 2 – 3 spring onions
  • 1 ripe avocado
  • 1 lareg hand full basil leaves
  • 50 grams garted Parmesan cheese
  • 50 grams pine nuts
  • 1 clove of garlic
  • A dash lemon juice
  • Olive oil for pesto
  • Salt & pepper
  • Basilfor garnish

Required kitchen gadgets, helper & preparations:

  • Tall container for pesto sauce
  • Immersion blender
  • Large pot for pasta
  • Pasta strainer
  • Cup + ladle to skim off pasta water

Halve the cherry tomatoes. Clean the spring onions & cut into fine rolls. Roast the pine nuts in a pan without adding oil or fat for 1 – 2 minutes over a medium heat until golden brown, turning occasionally.

For the pesto sauce, put two thirds of the roasted pine nuts in a tall container. In addition, add a handful of basil leaves, 50 grams of grated Parmesan, 1 clove of garlic (roughly chopped), the pulp of an avocado, a splash of lemon juice, a good dash of olive oil and a good pinch of salt & pepper. Then use a hand blender to make a creamy pesto sauce.




Bring a large pot of salted water to a boil & cook the pasta in it for 7 – 8 minutes or according to the instructions on the package, then pour it over a pasta sieve, collecting around 100 milliliters or a small cup of pasta water.

Put the tagliatelle back into the pot, also add the cherry tomatoes and spring onions & the avocado pesto & then gradually add the pasta water & stir everything together until all the ingredients are evenly distributed & you got a creamy avocado pasta.




Then dish up the tagliatelle with avocado pesto & cherry tomatoes on deep plates, garnish with the remaining pine nuts & some extra basil. Have fun cooking!
