…for pasta with salsiccia tomato sauce:
Peel the onion & garlic & chop finely. Cut the salsiccia lengthways with a knife & then use the back of the knife or a spoon to remove the meat from the intestines of the sausages.
Then heat up a large pan with a good dash of oil, add onions & garlic to the pan & sweat for 2 – 3 minutes, turning occasionally over medium heat. Next, add the salsiccia & fry for another 4 – 5 minutes until crumbly, turning occasionally.
When that’s done, add 1 can of chopped tomatoes, a heaping teaspoon of Italian herbs, possibly some chili powder or chili flakes (to your own taste) & a good pinch of salt & pepper, stir everything well and simmer for about 2 – 3 minutes over low heat. Finally add 50 milliliters of milk, stir in & then the sauce is done.
While the sauce is simmering, bring a large pot with salted water to a boil & cook the pasta for 7 – 8 minutes or according to the package instructions, then pour over a pasta sieve & allow to drain.
Dish up the done pasta on deep plates & serve with a few ladles of the salsiccia tomato sauce. Finally garnish with a few basil leaves and serve. Have fun cooking!
