Everyone knows chicken nuggets from the numerous fast food restaurants & of course they taste super delicious. In today’s post, I’ll show you a vegetarian version that doesn’t have to hide its taste.

For today’s recipe, we’re going to bread kohlrabi pieces & fry them like their meaty friends. We also serve a fresh herb quark dip with chives, parsley and cucumber. Have fun cooking!

Ingredients for 4 servings:

…for quark dip with herbs:

  • 400 grams quark
  • ½ cucumber
  • 1 smal red onion
  • 1 small bunch chives
  • 1 small bunch parsley
  • Olive oil
  • white wine vinegar
  • Salt & pepper

…for kohlrabi nuggets:

  • 3 – 4 kohlrabis (depending on thier size)
  • About 100 grams wheat flour
  • 2 eggs
  • About 150 grams breadcrumbs
  • Salt, pepper & sweet paprika powder
  • Oil for deep-frying

Required kitchen gadgets, helper & preparations:

  • Grater for cucumber
  • Mixing bowl for quark dip
  • 3 bowls or plates for “breading street”
  • Pot or wok for deep-frying
  • Kitchen paper
  • Ladle

For the herb quark, coarsely grate ½ a cucumber with a grater. Peel and finely chop a red onion. Finely chop the chives & parsley. Put the grated cucumber, diced onions & chopped herbs in a mixing bowl & mix with 400 grams of quark. Season the quark with a dash of olive oil, some white wine vinegar and a good pinch of salt and pepper to taste, then set aside until ready to serve.

For the kohlrabi nuggets, peel the kohlrabi and cut into pieces of equal size with a knife. Prepare 3 deep plates for the “breading street”, one plate with flour, another with beaten egg & the last one with breadcrumbs, mix the breadcrumbs with 1 heaping teaspoon of paprika powder & season the beaten egg with a good pinch of salt & pepper.

Next, dip the prepared kohlrabi pieces one after the other in the flour first, then dip them in the beaten egg and finally dip them in the breadcrumbs, pressing down the breadcrumbs lightly. Repeat the whole process for the remaining kohlrabi pieces & next, heat up a pot or wok with about 750 – 1000 milliliters of oil for deep-frying.

Tip: Ideally check the oil temperature with a thermometer & heat up to 175°C – 180°C. Alternatively, dip a wooden skewer or wooden cooking spoon into the oil, if it starts to “bubble up” right away & many small bubbles immediately rise, the oil is hot enough.




Carefully slide the prepared kohlrabi nuggets into the hot oil in portions and fry for 5 – 6 minutes until golden brown and crispy, turning occasionally. Lift the done kohlrabi nuggets out of the oil with a ladle & allow to drain on kitchen paper.

Then bake the remaining kohlrabi nuggets in the same way & arrange the done kohlrabi nuggets on plates & serve together with the herbed quark dip. Have fun cooking!

Info: The kohlrabi nuggets still have a good bite with the above preparation method. If you would like them to be softer, you should boil them in salted water for a few minutes before breading.
